Slow-Cooker Chickpea Tagine Recipe: How to Make It image

While traveling through Morocco, my wife and I fell in love with the complex flavors of the many tagines we tried. Resist the urge to stir this dish too much, as it will break down the veggies. 1 small butternut squash (about 2 pounds), peeled and cut into 1/2-inch cubes
2 medium zucchini, cut into 1/2-inch pieces
1 medium sweet red pepper, coarsely chopped
1 medium onion, coarsely chopped
1 can (15 ounces) chickpeas or garbanzo beans, rinsed and drained
12 dried apricots, halved
2 tablespoons olive oil
2 garlic cloves, minced
2 teaspoons paprika
1 teaspoon ground ginger
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground cinnamon
1 can (14.5 ounces) crushed tomatoes
2 to 3 teaspoons harissa chili paste
2 teaspoons honey
1/4 cup chopped fresh mint leaves
Plain Greek yogurt, optional
Optional: Additional olive oil, honey and fresh mint

Steps:

  • Place the first 6 ingredients in a 5- or 6-quart slow cooker., In a skillet, heat oil over medium heat. Add garlic, paprika, ginger, cumin, salt, pepper and cinnamon; cook and stir until fragrant, about 1 minute. Add tomatoes, harissa and honey; bring to a boil. Pour tomato mixture over vegetables; stir to combine. Cook, covered, on low until vegetables are tender and sauce has thickened, 4-5 hours. Stir in mint. , If desired, top with yogurt, and additional mint, olive oil and honey to serve.

This bourbon brisket recipe taste like its been barbecued but it uses a slow cooker.

vegetable oil

onions, thickly sliced

1 L

gluten-free beef stock

4

garlic cloves, peeled

4

fresh bay leaves

2kg boned and rolled beef brisket

300 mL

(10 fl oz (½ pint)) bourbon

100g light brown sugar

100g tomato ketchup

100 mL

(3 ½ fl oz) cider vinegar

1/2 tbsp smoked paprika

1 tsp.

cayenne pepper

2 tsp.

ground cumin

1 tbsp.

onion powder

1 tbsp.

garlic granules

Steps:

  • In a large, deep frying pan, heat the oil and fry the onions over a high heat for 5min or until dark and golden, stirring occasionally. Stir in the stock, scraping the bottom of the pan and bring to the boil. Season well with pepper and a pinch of salt.

    Put the brisket into the pan of the slow cooker (cut the brisket in half if you can’t fit the whole piece in the pan), add the garlic cloves and bay leaves and pour over the hot cooking liquid. Cover with the lid and cook on low for 8hr, until the meat is tender and falling apart.

    Meanwhile, make the sauce. Put all the ingredients except 1tbsp bourbon in a large pan and stir together over a medium heat, bubbling for 15-20min until thick. Stir in the remaining bourbon and season to taste. Set aside.

Fry the lamb in the oil in batches and tip it into the slow cooker. Fry the onion in the same pan for 5 mins or until it softens a little. Add the carrots and spices, stir everything together, add the tomato purée, stock and 250ml water and swirl everything around the pan. Tip into the slow cooker. Add the sweet potato, dried cherries, honey and another 500ml water.
