Sloppy Joe casserole is a new way to enjoy this classic sandwich. Ground beef and veggies are simmered in tomato sauce, then topped with slider rolls and baked.

butter, divided

large carrots, peeled and grated

1/2

onion, diced

1

green bell pepper

5

cloves garlic, minced

2 1/2 lb.

ground beef

1 1/2 c.

ketchup

2 tbsp.

brown sugar

2 tsp.

chili powder

1 tsp.

dry mustard

2 c.

beef stock 

2 tbsp.

tomato paste

2 tbsp.

Worcerstershire sauce

1 1/2 tsp.

salt

1/2 tsp.

ground black pepper

Hot sauce, optional

slider rolls, from 1, 12-16oz. package

1 tsp.

everything bagel seasoning, or sesame seeds

Steps:

  • Preheat the oven to 375 degrees. Place 2 tablespoons of butter in a large skillet and place over medium heat. Once the butter has melted, add the carrot, onion and green bell pepper and cook until slightly softened, about 4 minutes. Add the garlic and cook 1 more minute. Add the ground beef, breaking up into little pieces with a wooden spoon, and cook until no pink pieces remain, 5-7 minutes. If a lot of liquid or fat remain in the skillet, drain most and discard. Add the ketchup, brown sugar, chili powder, dry mustard, beef stock, tomato paste, Worcestershire sauce, salt and pepper. Stir to combine and simmer for 3-5 minutes. Add hot sauce if desired. Transfer the mixture to a 9-by-13-inch casserole dish. Melt the remaining 2 tablespoons of butter. Nestle the slider rolls (tops and bottoms together) into the sloppy joe mixture and brush all over with the melted butter. Sprinkle the tops all over with everything bagel seasoning or sesame seeds. Bake for 8-10 minutes until the tops of the buns are toasty. Serve in serving bowls immediately.

5 lb. Ground Beef (I Used Ground Round)
3 tbsp. Olive Oil
2 whole Large Yellow Onions, Diced
2 whole Green Bell Pepper, Seeded And Diced
6 cloves Garlic, Minced
1 c. White Wine (or Low Sodium Beef Broth If You Prefer)
2 cans 28 Ounce Crushed Tomatoes
1 can (14 Oz. Size) Crushed Tomatoes
1 can (small, 4-ounce) Tomato Paste
1 jar Good Storebought Marinara Sauce (can Use Another Jar If You Like The Sauce To Be More Saucy Than Meaty)
1 tsp. Ground Oregano
1 tsp. Ground Thyme
4 whole Bay Leaves
2 tbsp. Sugar
2 tsp. Kosher Salt
1/2 tsp. Crushed Red Pepper (optional)
1/4 c. Finely Minced Fresh Parsley (or 3 Tablespoons Parsley Flakes), More To Taste
1 whole Rind From One Wedge Parmesan (optional)
1/2 c. Grated Parmesan Cheese (optional)
2 lb. Spaghetti, Cooked Al Dente And Tossed With Olive Oil
Extra Minced Parsley, For Serving

Steps:

  • IMPORTANT: This recipe can easily be halved! I just like to make a ton so I can freeze it. In a large pot over medium-high heat, brown the ground beef until totally browned. Remove meat from pot with a slotted spoon and put into a bowl. Set aside. Discard any grease in pot, but do not clean the pot. Drizzle in olive oil. When it is heated, throw in the diced onion and diced bell pepper. Stir it around for 1 1/2 minutes, then add the garlic. Stir and cook for an additional minute. Pour in the wine and allow it to bubble up and reduce for about 1 1/2 minutes. Add crushed tomatoes, tomato paste, and marinara sauce. Stir to combine, then add oregano, thyme, sugar, salt, bay leaves, and crushed red pepper (if using). Stir, then add cooked ground beef and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquidAfter an hour, add the minced parsley and the rind from a wedge of Parmesan (or grated Parmesan if you prefer--or both!) Stir to combine, then put the lid back on and allow it to simmer for another 30 minutes or so. Discard bay leaves before serving.Serve a big bowl of oiled noodles and spaghetti sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread. Amen.
