For a quick-fix supper, try Pan-Seared Skirt Steaks. The skirt steaks are a great make-ahead option as well. They're just as flavorful when marinated 30 minutes or for a full 24 hours.

1 jalapeño pepper
½ cup dry red wine
3 tablespoons Worcestershire sauce
¼ cup chopped fresh cilantro
1 tablespoon olive oil
1 garlic clove, minced
2 pounds skirt steaks
1?¼ teaspoons kosher salt
1 teaspoon freshly ground pepper
¾ cup chopped fresh cilantro
3 tablespoons lime juice
2 tablespoons olive oil
1 garlic clove, minced
Kosher salt
Freshly ground pepper
Sweet Potato Hash

Steps:

  • Halve, seed, and mince jalapeño pepper. Combine wine, Worcestershire sauce, 1/4 cup chopped fresh cilantro, 1 Tbsp. olive oil, half of jalapeño pepper, and 1 minced garlic clove in a large zip-top plastic freezer bag. Add steaks; seal and chill 30 minutes to 24 hours. (If marinating overnight, let steak stand in marinade at room temperature 30 mins.) Remove from marinade, discarding marinade. Sprinkle steak with 1 1/4 tsp. kosher salt and 1 tsp. freshly ground pepper. Heat a grill pan over medium-high heat. Cook steaks, in batches, 2 minutes on each side (medium-rare) or to desired degree of doneness. Remove from grill pan, cover loosely with aluminum foil, and let stand 5 minutes. Stir together 3/4 cup chopped fresh cilantro, lime juice, 2 Tbsp. olive oil, 1 minced garlic clove, and remaining half of jalapeño pepper. Season with kosher salt and freshly ground pepper to taste. Cut steaks diagonally across the grain into thin slices. Serve with cilantro sauce and Sweet Potato Hash.

I, too, saw Alton Brown put his skirt steak right on top of the dusted coals. I figured I could simply get my grill pan super hot and cook the steaks as if I were cooking outdoors. I use my own mix of Emeril Lagasse's BAM as a dry rub and I also use a bit of meat tenderizer. FYI This IS Fajita Meat where I live. :) Skirt Steak is usually packaged in one long strip so you can choose how much you want to eat by the inch!

2 lbs skirt steaks
1 teaspoon meat tenderizer
1 teaspoon rosemary
1 teaspoon oregano
1 teaspoon garlic
1 teaspoon salt
1 teaspoon cayenne pepper
1 teaspoon parsley
1 teaspoon paprika
1 teaspoon onion powder
2 tablespoons olive oil

Steps:

  • Cut steaks to desired length.
  • Sprinkle tenderizer on both sides of steaks.
  • Sprinkle spices on both sides of steaks.
  • Get actual spice mix recipe from Emeril's site.
  • Put oil into a bowl.
  • Lay the meat into the oil.
  • Turn over and oil the other side of the steaks.
  • Place steaks on dry hot surface of your grill pan.
