For the pumpkin obsessed, a low fat, low calorie skinny pumpkin spice latte you can make yourself. October is my birthday month and one of my favorite treats this time of year is Starbucks' Pumpkin Spiced Latte. What a great way to start your morning!

Steps:
- In a small pan combine milk, pumpkin butter and sugar and cook on medium heat, stirring, until boiling.
- Remove from heat, stir in vanilla.
- Using an immersion blender, blend until smooth (or whisk well with a wire whisk)
- Pour into two mugs, add the hot espresso and top with fat free whipped cream and a dash of pumpkin pie spice on top.

- Place the milk, pumpkin puree, coconut sugar, vanilla extract, and .pumpkin spice in a medium sized pan and heat over medium low heat until simmering. Use a whisk to stir it to add some air since we're not using a frother.
- Add coffee and stir well.
- Pour into a cute cup, top with whipped cream and a sprinkle of nutmeg, and enjoy!

- The combination of coffee and milk mixture will depend on your preference, but I thought 1 cup of coffee and 3/4 cup of milk mixture was a good proportion! Add more or less depending on how sweet you like your coffee :).
