piece Chicken breast
Half root Cucumber
More than 10 Fungus
Right amount Chobe Salad Sauce

Steps:

  • Wash the chicken piece
  • Cut the chicken into small pieces along the lines for easy cooking
  • Put the water in the pot over the chicken, put a green onion, a few slices of ginger, an star anise, a few peppers, and two small pieces of bay leaves
  • Soak the fungus ahead of time, a dozen will be enough, I soak a bit too much
  • Poke with chopsticks after boiling, you can easily poke in and turn off the heat
  • Take it out and put it in cold boiled water to rinse. You can't use tap water directly because you will eat it directly later.
  • Cut along the lines and tear well
  • Shred the cucumber, you can cut it finer!

1 lb boneless skinless chicken breast, cut into 1/2 inch long thin strips
2 tablespoons shaoxing wine or 2 tablespoons dry sherry
2 teaspoons cornstarch
1 tablespoon fresh ground black pepper
2 tablespoons rice vinegar
2 tablespoons black vinegar
2 tablespoons dark soy sauce
1 tablespoon shaoxing wine
2 tablespoons sugar
2 teaspoons garlic and red chile paste
1/4 teaspoon sesame oil
1 head garlic, minced
2 tablespoons minced fresh ginger
1 bunch scallion, white and light green parts, minced
8 fresh water chestnuts, peeled and thinly sliced
1 piece black cloud ear mushrooms, soaked and drained (optional)
1 bunch scallion, dark green parts, thinly sliced
2 teaspoons cornstarch, dissolved into 2 tsp. water
3 tablespoons peanut oil (or canola oil)

Steps:

  • Marinate chicken with wine, cornstarch and black pepper while cutting vegetables. Mix together sauce ingredients: vinegars, soy sauce, wine, sugar, chili garlic paste and sesame oil. Set aside.
  • Slice water chestnuts into shreds, about three pieces per slice. Trim any woody parts from the fungus and discard. Roll up fungus into a cigar shape and thinly slice crosswise to make thin ribbon-like shreds.
  • Heat wok on high heat until it is about to start smoking, add oil and heat until it shimmers, then stir fry garlic, ginger and white part of scallion together for thirty seconds. Add drained chicken, and pat into a layer on the bottom of the wok. Allow chicken to brown lightly by sitting undisturbed on the wok for 45-60 seconds. Stir and fry until chicken is nearly done.
  • Add water chestnuts, fungus and sauce ingredients. Bring sauce to a boil. Add cornstarch and water, boil until thickened and glossy. Remove from heat and garnish with green scallion tops.

  • To Prep Prepare the chicken by rubbing it with salt inside and out. In a small bowl, combine Lee Kum Kee Premium Soy Sauce, dark soy sauce, Shaoxing cooking wine, sugar and the ginger juice. Stir well until sugar is dissolved. Cut the butterfly chicken to lie flat then rub all over with marinade and refrigerate uncovered overnight to dry the skin. To Cook Preheat BBQ with indirect heat (using burners away from the flat plate) to medium/hot temperature. Combine the julienned potato and potato marinate while the BBQ is warming up. Dress the chicken with vegetable oil and place on the BBQ flat plate. Close the lid on the BBQ to begin cooking. (cook with lid down). Cook for approximately 1 hr, checking occasionally to ensure it’s not overcooked. (Meat temperature near the bone should be 75?) Once ready, remove from the BBQ and rest for 10 to 15 mins. After removing the chicken from the BBQ, drain the potato marinade and cook the potato on the BBQ hot plate while the chicken is resting. (BBQ lid up now) For the dressing sauce, combine all dressing ingredients in a bowl and stir until sugar is dissolved. Cut the chicken and serve with a drizzle of dressing, fresh coriander leaves and the shredded potato on the side.
