These shepherd's pies are prepared just like regular shepherd's pie, but this classic comfort food is made in small cake pans, so everyone gets their own!

1 pound ground beef
1 onion, chopped
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup frozen corn
1 tablespoon ketchup
¼ teaspoon black pepper
2 cups prepared instant mashed potatoes
¾ cup shredded Cheddar cheese

Steps:

  • Cook and stir beef and onion in a skillet over medium-high heat until beef is browned and crumbly, about 5 minutes; drain and discard grease.
  • Reduce heat to low. Stir mushroom soup, corn, ketchup, and pepper into beef mixture; cook until heated through, about 2 minutes. Divide beef mixture into four 4-inch round baking pans; spread prepared mashed potatoes over beef mixture.
  • Bake in the preheated oven until potatoes are lightly browned, about 15 minutes.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Sprinkle Cheddar cheese evenly over pies. Place pies on a baking sheet.
  • Broil until cheese is melted, about 2 minutes. Allow to cool for 5 minutes before serving.

Make these shepherd's pies for your toddler and see how they wolf them down. As well as lamb, they're packed with lentils, carrots, courgette and pepper

Yield Makes 8 individual pies for young children

Number Of Ingredients 16

1 tbsp rapeseed oil
1 onion, chopped
2 garlic cloves, crushed
2 carrots, peeled and diced
1 stick celery, diced
1 yellow pepper, diced
pinch of cumin
250g lean lamb mince (10% fat)
1 courgette, diced
2 tbsp tomato purée
400ml low salt beef stock (we used Kallo for gluten-free pies, see tip below)
100g lentils, thoroughly rinsed
1.2kg Maris Piper potatoes
50g butter
75ml milk
60g grated cheddar

Steps:

  • Heat the oil in a medium saucepan, add the onion and cook for around 5 mins until softened. Stir in the garlic, carrots, celery, pepper and cumin. Cook for a further two mins, then add the lamb. Brown the meat, tipping off any excess fat. Add the courgette and tomato purée, then fry for a few mins more. Pour in the stock, add the lentils and bring to a simmer. Cook for 40 mins, stirring from time to time.
  • Heat the oven to 180C/fan 160C/gas 4. Boil the potatoes for 10-15 mins until tender. Drain, then mash with the butter and milk.
  • Remove the lamb mixture from the heat and use a stick blender to pur é e. Stir as you pur ée, blending down the pieces of vegetables. Spoon into 8 largish individual ramekins. Top with the mash and grated cheese. The pie can now be chilled and frozen for up to a mont h.
  • Bake for 30 mins until the top is golden and the mince is bubbling up at the sides. (Cook from frozen at 160C/fan 140C/gas 3 for about 40 mins, then turn up to 180C/fan 160C/gas 4 for 20-30 mins or until golden on top and piping hot in the centre.) Leave to stand for at least 10 mins before serving. Check it has cooled down sufficiently in the centre before giving it to young children.

    1. Preheat the oven to 200°C/400°F/gas 6.
    2. Peel and chop all the potatoes into rough 2cm chunks. Place the Maris Pipers into a large pan of cold salted water over a medium heat. Bring to the boil, then simmer for 10 to 15 minutes, or until tender, adding the sweet potatoes after 5 minutes.
    3. Drain and leave to steam dry, then return to the pan with the margarine and a pinch of sea salt and black pepper. Mash until smooth, then set aside.
    4. Peel and finely slice the onion, carrots and 2 garlic cloves, then trim and finely slice the celery.
    5. Bash the coriander seeds in a pestle and mortar until fine, then add it all to a medium pan over a medium heat with a good splash of oil. Pick in the thyme leaves, then cook for around 10 minutes, or until softened.
    6. Meanwhile, roughly chop the mushrooms and sun-dried tomatoes, then add to the pan along with the vinegar and 2 tablespoons of the sun-dried tomato oil from the jar.
    7. Cook for a further 10 minutes, then add a splash of wine, turn up the heat, and allow it to bubble away. Stir in the stock, lentils and chickpeas (juice and all), then leave it to tick away for 5 to 10 minutes, or until slightly thickened and reduced.
    8. Pick and roughly chop the parsley leaves, then stir into the pan. Season to taste, then transfer to a baking dish (roughly 25cm x 30cm).
    9. Spread the mash over the top, scuffing it up with the back of a spoon.
    10. Finely slice the remaining garlic clove, then place into a bowl with the rosemary leaves, lemon zest, breadcrumbs and 1 tablespoon of oil. Mix well, sprinkle over the mash, then place in the hot oven for around 10 minutes, or until piping hot through.
    11. Place under the grill for a further 2 to 3 minutes, or until golden, then serve with seasonal greens.

French green lentils (Puy lentils) make a hearty base for this vegetarian shepherd’s pie. They may be slighter harder to find than other lentils, but they’re worth the extra effort. Unlike brown or red lentils, green lentils retain their shape and texture after cooking, which means they stand up well to a long simmer and this rich potato topping. Store-bought vegetable stock can vary greatly so be sure to buy one with a pleasant flavor that isn’t too sweet. (Note: Parmigiano-Reggiano cheese contains rennet, so it is not vegetarian. Use a vegetarian Parmesan or leave it out. If you leave it out, be sure to season the potatoes well with salt and pepper.)

  • Preheat oven to 400°. Make mashed potatoes: In a large pot, cover potatoes with water and add a generous pinch of salt. Bring to a boil and cook until totally soft, 16 to 18 minutes.
