bell peppers (red, yellow and/or orange), cut into large chunks

2

red onions, trimmed and cut into quarters

3 tbsp.

olive oil

1 tsp.

dried sage

1 tsp.

kosher salt

Black pepper, to taste

hoagie or sub rolls

Steps:

  • Preheat the oven to 425°. Spread the peppers and onions on a baking sheet. Drizzle with the olive oil, sprinkle with the sage, salt and some pepper and toss, breaking up the onions a bit as you do. Put the sausages in and around the vegetables on the baking sheet. Bake until the sausages are cooked through and the vegetables are tender, 30 to 35 minutes. Slice the sausages and serve on rolls with the roasted vegetables.

head garlic, cloves smashed and peeled

1 1/2 tsp.

dried oregano

1 tsp.

kosher salt

6 tbsp.

olive oil

1/2 c.

 grated pecorino cheese

1/4 c.

chopped fresh parsley

Balsamic glaze, for dripping

Steps:

  • Sprinkle the pecorino and parsley over both baking sheets. Top each serving with a drizzle of balsamic glaze.

  • Preheat the oven to 425°. Brush 2 rimmed baking sheets with olive oil. Toss the corn, celery and bell peppers with the thyme, 3 tablespoons olive oil, 1 teaspoon each Cajun seasoning and salt and a few grinds of pepper in a large bowl until well coated. Divide between the baking sheets and spread in a single layer. Add the chicken to the same bowl. Add the garlic and remaining 2 tablespoons olive oil and 1 tablespoon Cajun seasoning.
