This is a traditional and popular Chinese classic dessert, served during Lunar New Year and it that will satisfy your sweet cravings.

Number Of Ingredients 8

¼ cup red bean, dried
4 cups water
¼ cup sugar
? cup hot water
½ cup light brown sugar
2 cups glutinous rice flour, plus more for dusting
½ cup sesame seed
7 cups vegetable oil

Steps:

  • Make the red bean filling: In a medium bowl, combine the red beans with 1 cup (240 ml) of water. Cover with plastic wrap and soak overnight.
  • Drain the red beans, then transfer to a small saucepan with the remaining 3 cups (720 ml) of water. Bring to a boil over medium-high heat, then cover and cook for 1 hour, until soft enough to mash with a fork.
  • Add the sugar and cook, stirring frequently, until the liquid evaporates and a thick red bean paste forms.
  • Transfer the red bean paste to a bowl. Cover with plastic wrap, pressing it directly onto the surface of the paste to prevent a skin from forming. Refrigerate until ready to use.
  • Make the dough: In a liquid measuring cup or small bowl, whisk the hot water with the light brown sugar until the sugar dissolves.
  • Add the glutinous rice flour to a medium bowl and use a spoon to create a small well in the center.
  • Pour the sugar syrup into the well and stir for 5 minutes, until the dough is well combined and no longer sticks to the bowl.
  • Lightly dust a clean surface with glutinous rice flour. Turn the dough out and knead for 5 minutes, until it forms a smooth, round ball. Use a little bit more flour or water as needed.
  • Divide the dough into 8 pieces. Roll the pieces into small balls, then flatten into discs about ½-inch (1 ¼ cm) thick and 2½-inches (6.5 cm) in diameter.
  • Place 1 teaspoon of red bean filling in the center of a piece of dough. Fold in the edges to cover the filling, then roll into a ball. Roll the ball in the sesame seeds until the dough is covered. Repeat with the remaining ingredients.
  • Heat the vegetable oil in a large pot until it reaches 350°F (180°C).
  • Fry the sesame balls for 15 minutes, stirring frequently, until golden brown. Transfer to a wire rack set over a baking sheet to drain and let cool for 15 minutes before serving.

2 cups glutinous rice flour
2 tablespoons sugar ((use more for a sweeter dough))
12 one-inch cube cheese
½ cup sesame seeds
cooking oil (for deep frying)

Steps:

  • Dump the glutinous rice flour and sugar into a bowl. Mix in just enough water to allow the mixture to come together into a ball.
  • Using a small ice cream scoop, divide the dough into 12 portions.
  • Roll each portion between the palm of your hands to form small balls.
  • Arrange the balls on your work surface and, using your index finger, press the center of each ball to create an indentation.
  • Drop a cube of cheese at the center of each ball.
  • Gather each ball to enclose the cheese filling.
  • Roll the balls in sesame seeds to completely cover the surface.
  • Heat enough cooking oil to reach a depth of at least three inches.
  • Fry the sesame seed balls over high heat until the crust is crisp and golden brown.
  • Serve the sesame seed balls while hot.

  • To Prep In a mixing bowl, combine the glutinous rice flour, baking powder and sugar. Pour in the boiling water and stir until the water has mixed with the flour before adding the vegetable oil. Allow the dough to rest for 5 minutes before kneading by hand for a few minutes until the dough is soft and smooth. Allow to rest for another 10 minutes. Divide the dough into 10 equal pieces, and roll them into balls. Keep the dough balls covered with a cling film to prevent them from drying out. Flatten the dough balls into disks and then place 1/2 tsp of red bean paste in to the center and gather the sides and roll into a ball. Set aside and repeat with the remaining dough. Fill one bowl with water and another bowl with the sesame seeds. Transfer one of the sesame balls in to the water and then quickly transfer the wet ball in to the sesame seed bowl. Coat the balls well and then set them aside for frying. To Cook In a wok, heat enough vegetable oil to cook the sesame balls. When the oil has reached a temperature of about 150 degrees Celsius, add the sesame balls one at a time, and fry for about 10 minutes or until golden and puffed up Transfer the sesame balls on to a drying rack and let cool slightly before serving!
