Tex-Mex Seasoning Mix Recipe: How to Make It image

This spice mix goes together quickly and makes a great little gift to include with holiday greetings for neighbors and coworkers. They can mix it into chili and scrambled eggs, use it to season tacos and burritos, or add zip to a can of refried beans. —Tammy Rose, Danville, Arkansas

Number Of Ingredients 17

2 tablespoons dried parsley flakes
4 teaspoons dried minced onion
4 teaspoons chili powder
3 teaspoons dried minced chives
3 teaspoons ground cumin
ADDITIONAL INGREDIENTS FOR TEX-MEX DIP:
1/2 cup mayonnaise
1/2 cup sour cream
Corn chips
ADDITIONAL INGREDIENTS FOR TEX-MEX CHICKEN:
7 cups uncooked wide egg noodles
1 package (16 ounces) process cheese (Velveeta), cubed
1 cup sour cream
2 tablespoons milk
3 packages (6 ounces each) ready-to-use Southwestern chicken strips
1 can (15 ounces) black beans, rinsed and drained
1 can (10 ounces) diced tomatoes and green chilies, undrained

Steps:

  • In a small bowl, combine the first five ingredients. Store in an airtight container in a cool, dry place for up to 6 months. Yield: about 6 tablespoons., To prepare dip: In a small bowl, combine the mayonnaise, sour cream and 4-1/2 teaspoons seasoning mix. Serve with corn chips. Yield: about 1 cup., To prepare chicken: Cook noodles according to package directions. Meanwhile, in a large saucepan, combine the process cheese, sour cream and milk. Cook and stir over medium-low heat until cheese is melted. Add the chicken, beans, tomatoes and 2 tablespoons seasoning mix; heat through., Drain noodles; add to sauce and toss to coat.

Stovetop popcorn is the most rewarding cooking project: With a pot and a little oil, you can turn a scoop of kernels into a big batch of warm popcorn in less than 5 minutes.

3 tbsp. Canola oil  
3/4 c. Popcorn kernels
Salt, to taste

Steps:

  • Place a large (8-quart) pot over high heat and add the oil. The oil should just cover the bottom of the pan. Heat the oil until it's rippling but not smoking, then add the popcorn kernels and shake the pot so the kernels form a single layer on the bottom. Place the lid on the pan and immediately reduce the heat to medium. Once the kernels start popping, shake the pan every so often and listen to the pace of the popping: The kernels should pop rapid-fire and should continue as one long continuous burst. As soon as the popping slows to a few kernels at a time, turn off the heat. (If you find that your kernels are popping just a few at a time for a long time and aren’t picking up speed, take a peek and see if the kernels are getting too dark without opening: You might need to start again if they’re starting to burn. It’ll be worth the redo!)Remove the lid and immediately add salt or other seasonings; tap the pot up and down to distribute the salt. Pour half the popcorn into a large serving bowl, then salt the remaining popcorn in the pan and add to the bowl.
