A great way to serve sweet potatoes! The spices balances out the natural sweetness of the potato. Serve with Southwestern Turkey Burger.

1 1/2 lbs sweet potatoes
2 tablespoons olive oil
1 teaspoon garlic, chopped
1 1/2 teaspoons chili powder
1/2 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon cumin

Steps:

  • Preheat oven to 450.
  • Scrub the potatoes if leaving the skins on or peel. Cut sweet potato into wedges (about 8 wedges per potato).
  • Place potatoes in gallon ziploc bag or large bowl and add remaining ingredients.
  • Coat potatoes evenly with oil and spices. Place in single layer on baking sheet.
  • Bake for 15 minutes. Turn over and bake another 10-15 minutes.
  • Serve with mayo or ketchup for dipping.

1-1/2 cups potato sticks
1-1/2 cups cheddar-flavored snack crackers
1-1/2 cups sourdough pretzel nuggets
3 tablespoons butter
1/4 cup grated Parmesan cheese
3 tablespoons olive oil
1-1/2 teaspoons sesame seeds
1-1/2 teaspoons dried minced garlic
1-1/2 teaspoons dried minced onion
1-1/2 teaspoons poppy seeds
1/4 teaspoon kosher salt

Steps:

  • Preheat oven to 350°. In a large bowl, combine potato sticks, crackers and pretzels. In a small saucepan, melt butter; stir in remaining ingredients. Drizzle over pretzel mixture; toss to coat. , Spread in a greased 15x10x1-in. baking pan. Bake until crisp and lightly browned, 12-15 minutes, stirring every 4 minutes. Cool completely in pan on a wire rack. Store in an airtight container.

  • Saute onion in oil in a small skillet until tender. Cool to room temperature., Combine the eggs, milk, Worcestershire sauce, mustard, crackers, salt, pepper, thyme and onion in a large bowl. Crumble beef and pork over mixture and mix well. Shape into a loaf; place in a greased 11x7-in. baking dish., Bake, uncovered, at 350° for 1 hour. Combine ketchup and brown sugar; spread half of sauce over meat loaf. Bake 15-20 minutes longer or until no pink remains and a thermometer reads 160°. Let stand for 10 minutes before slicing. Serve with remaining sauce.
    Freeze option: Bake meat loaf without sauce. Securely wrap and freeze cooled meat loaf in plastic wrap and foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaf and place in a greased shallow baking pan. Prepare sauce as directed; spread half of sauce over meat loaf. Reheat meat loaf in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°. Serve with remaining sauce.

  • Cut the red onion into ½-inch thick round slices, keeping the circles of the onion intact. Set aside. Combine the bison, Worcestershire sauce, salt, and pepper a large bowl. Mix gently but thoroughly to combine. Divide the mixture into four even portions, about 8 ounces each. Pat together into a ball (but not too tightly), then press into a patty, about 1-inch thick. Heat a large cast-iron skillet over medium heat. Add 2 tablespoons of butter and swirl to coat the pan. Place the onion slices in the pan and cook for 3 minutes on each side, until golden brown. Remove from the skillet and set aside. Add the remaining 1 tablespoon of butter to the skillet. Place the bison patties in the skillet and sear until golden, about 5 minutes. Flip and cook the other side until the internal temperature of the burger reaches 130 to 135˚ (for medium-rare), 3 to 4 minutes more. If you like cheese on your burgers, add it during the last minute of cooking, then cover to melt.  Serve the burgers immediately on toasted buns with seared red onion rings, pickles, and BBQ sauce.
