Pork Loin with Sauerkraut and Apples – Instant Pot Recipes image

This is a traditional German dish often served on New Year’s Day for good luck. The cooked apples, onions, and kraut are sometimes served over mashed potatoes. It might sound like a crazy combination, but the flavors meld to create a sweet and savory sauce. Try them over cauliflower mashed potatoes to soak up all that goodness.

Yield 4-6 servings

Number Of Ingredients 9

2-3 pound pork loin roast
1/2 teaspoon Pink Himalayan salt (or Celtic salt)
1/2 teaspoon pepper (freshly ground)
2 tablespoons butter (or ghee)
2 large onions (chopped)
3 cloves garlic (chopped)
1 cup chicken bone broth
4-6 cups sauerkraut (rinsed and drained)
3 Granny Smith apples (peeled, cored and chopped)

Steps:

  • Season roast with salt and pepper.
  • Set your Instant Pot to the Sauté setting. When display reads "hot", melt the butter or ghee, and brown the roast on all sides.
  • Remove the roast from the cooker and add onions, garlic, and broth. Scrape brown bits from the bottom of the pot.
  • Return roast to the Instant Pot. Using the Manual setting, adjust to high pressure and set to cook for 45 minutes.
  • When time is up, use the quick release method to release pressure and quickly add sauerkraut and apples to the cooker.
  • Bring back to full pressure for 5 minutes and again use the quick release method.
  • Slice and serve with sauce. Enjoy!

The apple and onion together work magic on this classic dish. This is traditionally served on New Year's Day in Central Pennsylvania. It is customarily served with mashed potatoes. The sauerkraut mixture tops the mashed potatoes like a gravy. Surprisingly good.

Number Of Ingredients 6

6 thick-cut pork chops
4 tart apples, peeled and sliced
1 large onion, sliced
water to cover
1 quart sauerkraut
½ teaspoon fennel seed, or to taste

Steps:

  • Heat a large skillet over medium-high heat. Brown pork chops in hot skillet, 2 to 3 minutes per side. Drain.
  • Arrange apples and onion in the bottom of a slow cooker; top with browned pork chops. Pour in enough water to cover bottom of the slow cooker crock.
  • Cook on High for 3 hours (or on Low for 6 hours). Add sauerkraut and fennel seed to pork chop mixture. Cook for 1 more hour.

  • Quarter cabbages and remove cores; slice 1/8 in. thick. In an extra-large bowl, combine salt and cabbage. With clean hands, squeeze cabbage until it wilts and releases liquid, about 10 minutes. If desired, add optional ingredients., Firmly pack cabbage mixture into 4-quart fermenting crock or large glass container, removing as many air bubbles as possible. If cabbage mixture is not covered by 1-2 inches of liquid, make enough brine to cover by 1-2 inches. To make brine, combine 4-1/2 teaspoons canning salt per 1 quart of water in a saucepan; bring to a boil until salt is dissolved. Cool brine before adding to crock., Place crock weight over cabbage; the weight should be submerged in the brine. Or, place an inverted dinner plate or glass pie plate over cabbage. The plate should be slightly smaller than the container opening, but large enough to cover most of the shredded cabbage mixture. Weigh down the plate with 2 or 3 sealed quart jars filled with water. If using a glass container with a lid, cover the opening loosely so any gas produced by the fermenting cabbage can escape. Alternately, you can cover the opening with a clean, heavy towel. If using a crock, seal according to manufacturer's instructions. , Store crock, undisturbed, at 70°-75° for 3-4 weeks (bubbles will form and aroma will change). Cabbage must be kept submerged below surface of the fermenting liquid throughout fermentation. Check crock 2-3 times each week; skim and remove any scum that may form on top of liquid. Fermentation is complete when bubbling stops. Transfer to individual containers. Cover and store in the refrigerator for up to 3 months.
