This sauerkraut burger truly stands out. The sauerkraut adds a fresh tang that pairs well and highlights the savory beef flavor of the patty.

8 slices bacon
1¼ lb ground beef
2 tbsp vegetable oil
to taste kosher salt
to taste ground black pepper
4 burger buns
4 slices swiss cheese
¼ cup mustard
½ cup drained sauerkraut

Steps:

  • In a skillet, cook the bacon until crispy, between 5 and 10 minutes.
  • Once cooked, put the bacon on a paper towel-lined plate to sop up any excess grease and set aside to cool.
  • Preheat the grill on medium-high. Brush it with vegetable oil.
  • Take the ground beef and form it into four ¾-inch thick patties. Place the formed patties on a parchment paper-lined baking sheet.
  • Using your fingers, make a shallow well on the top of each burger.
  • Season the patties with the salt and pepper.
  • Place the patties on the grill, well side up, for about 5 minutes.
  • Flip over the burger and cook until your desired doneness. Remove from heat.
  • Cut the bread in half and spread each piece of bread with the mustard.
  • Put the patties, bacon and sauerkraut in between the bread slices.
  • Serve with potato chips or french fries.

8 slices bacon
1?¼ pounds ground chuck (85 percent lean or less)
kosher salt and black pepper
canola oil, for the grill
4 large slices pumpernickel bread
¼ cup whole-grain mustard
½ cup drained sauerkraut

Steps:

  • In a large skillet, over medium-high heat, cook the bacon until crisp, 6 to 8 minutes. Transfer to a paper towel-lined plate; let cool.
  • Heat grill to medium-high. Form the beef into four ¾-inch-thick patties. Use your fingers to make a shallow well in the top of each patty. (This will prevent overplumping during cooking.) Season with a total of ½ teaspoon each salt and pepper.
  • Oil the grill and cook the patties with the wells facing up for 4 to 5 minutes. Flip and cook until an instant-read thermometer inserted in the center registers 155° F for medium, 4 to 5 minutes more. Cut the bread in half crosswise and, dividing evenly, spread with the mustard. Form sandwiches with the bread, burgers, bacon, and sauerkraut.
