Translated from Norwegian, the name of these cookies is "'sand tarts." They're most attractive if baked in authentic sandbakkelse molds, which can be purchased online or in a Scandinavian import shop. Most any decorative cookie mold will do, though, and the interesting shapes will make these tarts the focus of your cookie tray. —Karen Hoylo, Duluth, Minnesota

1 cup plus 2 tablespoons butter, softened
1 cup sugar
1 large egg, room temperature
1 teaspoon almond extract
1/2 teaspoon vanilla extract
3 cups all-purpose flour

Steps:

  • In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add egg and extracts. Blend in flour. Cover and chill for 1-2 hours or overnight.
    Preheat oven to 375°. Using ungreased sandbakkelse molds, press 1 tablespoon dough into each mold. Bake cookies in molds until they appear set and just begin to brown around the edges, 10-12 minutes.
    Cool cookies for 2-3 minutes in molds. When cool to the touch, remove from molds. To remove more easily, gently tap with a knife and carefully squeeze the sides of the mold.

This is an old Swedish recipe. Use with sandbakelse molds.

? cup blanched almonds
4 raw almonds
¾ cup butter
¾ cup white sugar
1 egg white
1?¾ cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Finely grind the almonds in a food processor.
  • In a medium bowl, cream the butter and sugar together. Mix in ground almonds and egg white. Stir in the flour. Roll dough into 1 inch balls and press into the sandbakelse molds to form a thin coating. Place molds on a baking sheet and bake for 12 to 15 minutes. Cool slightly before removing from molds. Gently tapping the molds on the counter will help to loosen the cookies.

This is considered a buttery cookie but looks like a miniature tart base. Sometimes it is eaten just plain without anything in it. Sometimes it is filled just before eaten with whipped cream and fruit or jam. It is normally pressed into tiny fluted tins. Tiny muffin tins would probably work just as well. My DBIL was born in Norway. He loves many of their heritage foods. This is one of them which my sister makes every year at Christmas time for him. I think if I remember correctly the name means 'Sand Tarts'. Posted for ZWT 2010. Preparation time does not include refrigeration time.

  • This recipe for Sand Tarts (Sandbakkelse) comes from The Scandinavian Set out sandbakkelse molds and cookie sheets. Measure flour and set aside. Chop almonds very finely and set aside. Cream together butter and almond extract till butter is softened. Add in sugar gradually, creaming just till blended. Blend in egg. Add in the flour in fourths, blending well after each addition. Blend in the minced almonds. Refrigeratedough in refrigerator. Remove a portion of the dough from refrigerator and return remaining dough to continue chilling. Place about two tsp. dough in each mold. Using the thumb, firmly press dough into each mold, coating the bottom and sides proportionately. Place molds on the cookie sheets. Repeat with the remaining dough. Bake at 375 degrees F 6 to 8 min, or possibly till sand tarts are golden. Immediately invert molds onto a smooth surface. Cold slightly. To remove sand tart from mold, hold the mold in the hand and tap lightly but firmly with the back of a spoon. Remove pan and place sand tarts on a smooth surface to cold completely. Serve sand tarts inverted. Or possibly turn sand tarts right side up and fill with jam, jelly, or possibly whipped cream. /COOKIES
