Homemade Salted Duck Egg is a famous Chinese side dish especially for breakfast. The egg white can be matched with congee directly while the yolk can be used in steamed recipes, stir fry dishes and traditional Chinese moon cake.

10 fresh duck eggs
500 ml hard liquor (, or 100ml to soak in batches)
500 ml water
175g salt

Steps:

  • Carefully wash the eggs until clean.  Then place under sunshine for 6 hours (depending on the room temperature) in winter. In summer days,  shorten the time to 1 hour, morning sun please. Or at least 4 hours in other seasons.
  • Then soak the eggs with lard liquid or you can use a small amount of the liquid and soak them in batches.
  • In the mean time, add salt and water in a completely clean pot, heat until boiling. Turn off the fire and wait until cool down.
  • Wait for 25 to 45 days, also depending on the room temperature.
  • When the egg is well pickled, hard boil them before serving.

A Chinese delicacy eaten with meals as a side dish. Salted Duck eggs are also used as a filling for moon cakes and many glutinous rice dumpling recipes. Wonderful when eaten dipped in Chinese mustard and soy sauce. Prep time is generous while "cook" time is at minimum 30 days, maximum 40 days. This recipe is courtesy of Christine Recipe, http://en.christinerecipe. The best salted duck eggs have a briny aroma, translucent egg whites and a bright orange-red yolk.

12 duck eggs (or chicken eggs)
1 cup rock salt
4 cups water
1 tablespoon shaoxing wine
1 star anise
2 teaspoons szechuan peppercorns

Steps:

  • Sanitize your glass container. Boil enough water to fully fill your jar. Allow water to cool just enough so as to not damage your jar when you pour it inches Wait a minute or two, pour the water out and allow your jar to air dry.
  • Inspect your eggs for cracks and breaks. Damaged eggs should be exchanged out. Rinse, drain, and set aside.
  • In a good sized saucepan being the water, salt, star anise, and peppercorns to a gentle boil. When the salt has completely dissolved turn off the heat and let cool completely. When the brine is cold add the Shaoxing wine. Stir to mix well.
  • You will want to make sure your eggs are completely un-damaged one more time. Stack the eggs carefully in the jar.
  • Pour the brine over the eggs. If they float above the brine place a weight (i.e. a small sauce plate) on top of the eggs.
  • If your jar has a tight fitting lid then cover and label with the date made and the date 40 days ( max ) forward. At 30 days open the jar, remove and boil an egg and taste for saltiness. If the taste is satisfactory then you can remove eggs from jar and place then in a container and refrigerate.
  • They will keep in the fridge for 2-3 weeks.
  • If your jar lid feels a bit loose take a piece of waxpaper to place over the opening then put the lid on . Label and test as above.
  • The dark orange-red yolk is a normal and highly desired effect. It is due to the use of the Shaoxing wine.

  • To Make Rinse the duck eggs and place them in to a resealable jar. Bring a medium sized saucepan of water to a boil before adding the salt and stirring until dissolved. Add the Shaoxing wine in to the mixture before removing the pan from the heat and pouring over the eggs. Ensure that all the eggs are fully submerged before closing the lid and storing in a cool place at room temperature for 21 days. A ziplock bag filled with water should be enough to keep them submerged. After 21 days, place one of the eggs in to a small saucepan of cold water and bring to a boil over medium heat for 10 minutes to check for saltiness. Eggs are ready if they are salty with a yellow-orange yolk. If the eggs aren't ready then let them marinate for another 7 days before removing them from the brine and transferring them to a fridge.
