Now, this easy weeknight meal may not photograph very well, but boy it is tasty. Slathered in creamy gravy, the cube steaks are very tender. This is a mild dish that will appeal to any palate. If you want a bit more seasoning, add some seasoned salt or even a Cajun seasoning. A great Crock Pot dinner option that will hit the spot when you have a busy day and don't have time to prepare an elaborate meal. We opted to serve this over rice but mashed potatoes would be delicious too.

1 - cube steak, family pack (includes about six)
2 can(s) cream of mushroom soup (10.75 oz)
1 package(s) onion soup mix, dry in envelope
3/4 cup(s) water
- salt & pepper, to taste

Steps:

  • Place cube steaks in a Crock Pot.
  • Stir all other ingredients together and pour over the meat. Cover and cook on low all day.
  • Serve over rice or mashed potatoes.

On a cold night, there's nothing better than a flaky chicken pot pie hot out of the oven. Pure comfort food. This chicken pot pie should be in your winter line up. Number Of Ingredients 15

2 pound(s) chicken breasts, boneless and skinless
2 cup(s) chicken broth (enough to cover breasts)
1/2 teaspoon(s) salt
1/4 teaspoon(s) ground black pepper
1 1/2 cup(s) half and half
3 tablespoon(s) butter (yes, 3 tablespoons!)
1 medium onion, chopped
1 cup(s) celery, chopped
1/3 cup(s) all-purpose flour
1 1/2 cup(s) frozen mixed vegetables, thawed (I use green beans, corn, carrots and peas)
2 medium potatoes, cooked and cubed (or 1 can small white potatoes, cubed)
1 tablespoon(s) parsley, freshly chopped
1/2 teaspoon(s) thyme, dried
2 - pie pastry (for double crust pie)
1 - egg, lightly beaten

Steps:

  • In a large saucepan over medium-high heat, combine the chicken breasts, chicken broth, salt, and pepper. Bring to a boil and reduce heat to low. Cover and let simmer for 30 minutes, or until chicken is no longer pink in the center and the juices run clear.
  • Remove the chicken and let cool. Pour the remaining chicken broth mixture into a measuring cup. Let stand; spoon off fat. Add enough canned broth to equal 1 cup if needed. Add half and half to the broth mixture to equal 2 1/2 cups. Cut chicken into 1/2 inch pieces.
  • In the same pan, melt butter or margarine over medium heat. Add the onion and celery. Saute, stirring, for 3 minutes. Stir in flour until well blended. Gradually stir in broth mixture and the herbs. Simmer, stirring constantly, until the sauce thickens and boils. (you will think this is TOO MUCH liquid, but it's not). Add the chicken and vegetables to the broth and stir to combine.
  • Line a deep pie dish with one of the pastries and pour the mixture in, almost to the top.
  • Cover mixture with second pastry, making sure to "seal the edges" by pinching together the top and bottom then pressing against the lip of the dish. Cut a few vent holes in the pastry then brush pastry with beaten egg. Use any leftover scraps from the pastries to make a design on top.
  • Bake at 400 degrees for 30 minutes or until the crust is golden brown and the filling is bubbling. Let cool for 10 minutes and serve. When done, the inside ingredients will be thick and creamy.

Not long ago when I was up at the Sunflower market, I treated myself to a piece of crock pot turkey. It was love at first bite! It was tender, juicy and fell apart like butter in my mouth!!! I have decided this Thanksgiving this is how I'm doing my turkey. The trick is to know how big a turkey to fit in your crock pot. You can also cut the turkey up and just do pieces too. I'm going to do a whole one. I have a 7 quart Kitchen Aid crock pot and I've read a 9.5 lb. turkey will just fit into that size crock. Times may vary depending on your crock pot. Mine is very fast, so I might be able to cook the whole thing in 4 hours. But check it and use the thermometer to make sure it reaches the right temperature so it doesn't over cook. I thought I'd do this so those of you who want an easy way to do their Thanksgiving Turkey can use this method. NOTE: It is recommended with this recipe that you put the dry rub or herbs on your turkey 24 hours before cooking to let the flavours get into the meat. Maybe even put some inside the cavity. If you use a bouquet garni that would be great for inside the turkey as well. You can also stuff this turkey if you wish. Some of the stuffing might leak into the pot but that would probably just add to the flavour.
