Categories     Turkey Recipes

Total Time 3 hours

Prep Time 15 minutes

Yield Serves 8 to 10

Number Of Ingredients 4

1 whole turkey (about 12 pounds), thawed if frozen, rinsed and patted dry (neck and giblets reserved for Giblet Stock for Salt and Pepper Turkey, liver discarded)
Coarse salt and ground pepper
6 tablespoons butter (3/4 stick), room temperature
Bread Stuffing with Sage

Steps:

  • Make Giblet Stock. Preheat oven to 375 degrees, with rack in lowest position. Tuck wing tips underneath body of turkey. Season inside of turkey with salt and pepper. In a small bowl, mix together butter and 1 teaspoon salt. With your fingers, gently separate breast skin from flesh without tearing skin. Spread butter mixture evenly under breast skin.
  • Loosely fill large cavity and neck cavity with stuffing; fold neck skin over opening. Tie legs together with kitchen twine. Season turkey generously with salt and pepper. Place turkey in an 11-by-14-inch roasting pan. Roast 1 hour. Reduce heat to 350 degrees; tent turkey with foil. Roast until an instant-read thermometer inserted in the thickest part of thigh registers 165, 1 1/2 to 2 hours.
  • Transfer turkey to a cutting board, still tented with foil, and let rest 30 minutes. Reserve pan with drippings for Pan Gravy. To serve, carve turkey and scoop out stuffing.

AUTHENTIC PEPPER POT SOUP RECIPE | ALLRECIPES

Authentic Pepper Pot Soup Recipe | Allrecipes image

The authentic version uses tripe. I have never cared for tripe, myself, and I have always substituted chicken, beef, turkey, sausage or even ham instead.

Total Time 3 hours 0 minutes

Prep Time 20 minutes

Cook Time 2 hours 40 minutes

Yield 8 - 12 servings

Number Of Ingredients 18

1 pound honeycomb tripe
5 slices bacon, diced
½ cup chopped onion
½ cup chopped celery
3 leeks, chopped
1 bunch fresh parsley, chopped
2 green bell peppers, diced
2 quarts beef stock
¼ teaspoon dried thyme
½ teaspoon dried marjoram
½ teaspoon ground cloves
¼ teaspoon crushed red pepper flakes
1 bay leaf
1 teaspoon ground black pepper
1 large potato, peeled and diced
2 large carrots, diced
4 tablespoons margarine
4 tablespoons all-purpose flour

Steps:

  • Place the tripe or other meat that you have selected to use in a saucepan, and cover with water. Bring to a boil, and turn off the heat. Allow the meat to cool a bit in the water, and then drain and rinse. Cut into 1/4 inch pieces.
  • In a large heavy kettle, saute the bacon until clear. Add the onion, celery, leeks, parsley, and green peppers; saute until tender.
  • Stir in beef stock, thyme, marjoram, cloves, red pepper flakes, bay leaf, and black pepper. Bring the kettle to a boil, and turn down to a simmer. Cook, covered, until meat is very tender, about 2 hours.
  • Add the diced potato and carrots, and cook for an additional 20 minutes.
  • Prepare the roux by stirring the flour into the melted butter or margarine, and cooking for a moment on the stove. When the soup is done to your liking, stir in the roux. Simmer, stirring all the while, until the soup thickens a bit. Correct the seasonings.

    1. Place the chillies and peppers over a hot barbecue, in a griddle pan or on a tray under a hot grill, turning them now and then until blackened and blistered all over.
    2. Carefully lift the hot peppers and chillies into a bowl (the smaller chillies won’t take as long as the peppers so remove them first) and cover tightly with clingfilm. As they cool down, they’ll cook gently in their own steam. By the time they’re cool enough to handle, you’ll be able to peel the skin off easily.
    3. When you’ve got rid of most of the skin, trimmed off the stalks and scooped out the seeds, you’ll be left with a pile of nice tasty peppers and chillies. Finely chop by hand or put in a food processor and whiz up, then put to one side.
    4. Peel and roughly chop the onions, then pick and finely chop the rosemary leaves.
    5. Drizzle a splash of oil into a pan over a low heat, add the onions, rosemary, bay leaves and cinnamon, then season with a little sea salt and black pepper.
    6. Cook very slowly for about 20 minutes, or until the onions become rich, golden and sticky.
    7. Add the chopped peppers and chillies, sugar and balsamic to the onions and keep cooking. When the liquid reduces and you’re left with a lovely thick sticky chutney, season well to taste.
    8. Remove the cinnamon stick and the bay leaves. Either spoon into sterilised jars and put them in a cool dark place, or keep in the fridge and use right away. In sterilised jars, the chutney should keep for a couple of months.
