Plus: More Vegetable Recipes and Tips

Provided by Ruth Rogers

Yield 8

Number Of Ingredients 9

3 tablespoons fresh lemon juice
8 baby artichokes (about 1 pound)
1/4 cup plus 1 tablespoon extra-virgin olive oil
1 large red onion, thinly sliced
Salt and freshly ground pepper
4 cups fresh young peas (about 4 pounds in the pod) or thawed frozen peas
2 cups fresh peeled fava beans (about 2 pounds in the pod)
3 tablespoons finely chopped fresh mint
2 tablespoons coarsely chopped fresh flat-leaf parsley

Steps:

  • Stir 1 tablespoon of the lemon juice into a large bowl of water. Working with 1 artichoke at a time, pull off the dark outer leaves and trim 1/2 inch off the top. Peel the stem. Quarter the artichoke lengthwise, then scrape out the choke with a spoon and drop it into the lemon water. Repeat with the remaining artichokes.
  • Heat 2 tablespoons of the olive oil in a large heavy saucepan. Add the onion and cook over moderately low heat, stirring, until translucent, about 8 minutes. Drain the artichokes well, add them to the saucepan and season with salt and pepper. Reduce the heat to low and cook, stirring, until just tender, about 12 minutes. Add the peas, fava beans and 2 cups of water. Cover partially and cook over low heat until the vegetables are tender, about 6 minutes.
  • Add the mint and parsley to the vegetables and season with salt and pepper. Stir in the remaining 3 tablespoons of oil and 2 tablespoons of lemon juice. Serve warm or at room temperature.

THE ONLY BASIC RISOTTO RECIPE YOU’LL EVER NEED RECIPE ...

The Only Basic Risotto Recipe You’ll Ever Need Recipe ... image

There’s a reason so many restaurants put risotto on their menus: It’s not a dish most people attempt to cook at home. Risotto has a reputation for being fussy—and that’s not totally untrue. The dish requires a little attention and stirring, but at its core, it’s really just rice and broth. And when those two simple ingredients come together, they create a creamy, almost magical dish that’s well worth the effort. With a solid formula like the one below, you’ll be able to tackle any risotto recipe and have a gorgeous meal on the table in about 30 minutes.

Provided by Jennifer Kushnier

Yield 4

Number Of Ingredients 6

32 ounces unsalted chicken stock, warmed (you can also substitute vegetable broth or stock)
1 tablespoon unsalted butter
1 tablespoon olive oil
1 cup Arborio rice
1/4 teaspoon kosher salt
1/4 cup freshly grated Parmigiano-Reggiano or Pecorino-Romano cheese

Steps:

  • Bring stock to a simmer in a saucepan over medium. Reduce heat and keep warm. Melt the butter and heat the oil in a large skillet or wide-bottomed pot. Add the rice; stir to coat all the grains, 1 minute. Add 1 ladle of broth (½ cup to ¾ cup), stir, and leave it alone until broth is nearly absorbed, 2 to 3 minutes. (Run a wooden spoon through it; rice should slowly fill in the channel.)  Stir, add another ladle of broth, and stir again. Cook undisturbed until the broth is absorbed, 3 minutes. Repeat until about 1 ladle of broth remains, 15 to 18 minutes of total cook time for the rice. Turn off heat.  Add salt, remaining broth, and cheese. Stir gently for 2 minutes. Serve immediately in warmed bowls, with more grated cheese over top, if desired.
