1?½ pounds new potatoes (about 15), halved if large
1 bunch broccoli, cut into florets
3 tablespoons plus 1 teaspoon canola oil
kosher salt and black pepper
3 tablespoons white miso (soybean paste; found in the refrigerated section of the supermarket)
1 tablespoon rice vinegar
4 6-ounce pieces salmon fillet
¼ teaspoon crushed red pepper

Steps:

  • Heat oven to 425° F. On a large rimmed baking sheet, toss the potatoes and broccoli with 2 tablespoons of the oil, ½ teaspoon salt, and ¼ teaspoon black pepper. Roast, tossing once, until the vegetables are tender, 25 to 30 minutes.
  • Meanwhile, in a small bowl, whisk together the miso, vinegar, 1 tablespoon of the remaining oil, and 3 tablespoons water.
  • Heat the remaining teaspoon of oil in a large nonstick skillet over medium-high heat. Season the salmon with ¼ teaspoon each salt and black pepper and cook until opaque throughout, 3 to 4 minutes per side. Drizzle with the sauce, sprinkle with the crushed red pepper, and serve with the vegetables.

1 small stalk broccoli cut into pieces (about 1/2 cup)
1 sweet potato, scrubbed and cut into 1-inch chunks
2 tablespoons olive oil
1 tablespoon water
1 pear, unpeeled, cut into 2-inch chunks
¼ teaspoon kosher salt
freshly ground black pepper

Steps:

  • Heat oven to 500º F.
  • Toss the broccoli and sweet potato with the oil and water in a shallow roasting pan.
  • Place in the oven and roast 20 minutes, turning occasionally, until browned. Add the pear and roast until the vegetables are tender, about 10 minutes more.
  • Remove from oven and toss with the salt and pepper.

  • Stir together oil, Worcestershire, tamari, lemon zest, thyme, Sriracha, and garlic in a medium bowl. Place steak in a 13- x 9-inch baking dish or a gallon-sized plastic ziplock bag; pour marinade over steak to fully coat. Cover, and let marinate at least 2 hours or up to overnight in refrigerator, turning occasionally.  Preheat broiler to HIGH with an oven rack 6 to 8 inches from heat. Let steak rest 10 minutes before thinly slicing against the grain.  While steak rests, prepare the aioli: Stir together mayonnaise, roasted garlic, lemon juice, salt, pepper, and sugar in a small bowl. Serve sliced London broil and vegetables with aioli.
