1 teaspoon dry mustard
1 teaspoon dried thyme
1 teaspoon garlic salt
1 teaspoon celery salt
1 teaspoon coriander seeds
1 teaspoon ground black pepper
4½ pounds/2 kilograms 1 each standing rib roast
olive oil

Steps:

  • In a mortar with a pestle, combine all the ingredients for the rub and grind together finely. Lightly coat the beef with the oil, then coat the beef evenly with the rub. Allow the roast to stand for 30 to 40 minutes before grilling. Place a foil pan beneath the cooking grates to catch the drippings.
  • Prepare the grill for indirect cooking over medium-high heat (400° to 500°F).
  • Place the beef, bone side down, on a grilling rack and grill over indirect medium-high heat, with the lid closed, until an instant-read thermometer inserted into the thickest part of the roast (not touching the bone) registers 125°F for medium rare (or until cooked to your desired doneness), about 1 hour for medium-rare.
  • Remove the beef from the grill to a cutting board, tent with aluminum foil, and let rest at room temperature, indoors, for about 20 minutes. Carve into thin slices.

My DH grilled a Prime Rib roast for company dinner last night and I will never cook it any other way, it was perfectly done. Medium on the end cuts and medium-rare in the middle. The secret is to keep the grill temperature at 475* and never peek while it's cooking!!

4 -5 lbs boneless prime rib roast
2 -3 tablespoons McCormick's Montreal Brand steak seasoning

Steps:

  • Season the roast the night before you will be cooking it. Preheat the grill to 475* (we have a gas grill with three sets of burners, light the two side burners and not the one directly under the pan) Remove the roast from the refrigerator about 30 minutes before putting it on the grill. Remove from foil and place in a roasting pan, (we use throw away aluminum pans). Cook the roast for 60 minutes, turn off the grill and allow roast to 'rest' in the hot grill for an additional 60 minutes. It will be wonderful and you will have a great tasting au jus in the baking pan, just skim off the fat. Note, cooking time includes the resting time as well.

The process is simple: heat the grill, turn off one area of the grill, place the roast there and close the lid—you will be cooking with indirect heat (if you use charcoal, rake the coals away from an area to get this indirect heat). I kept this recipe super simple, letting the meat shine. The summer heat doesn’t mean you have to stop enjoying roasts. You just have to stop using your oven.

  • When grill is hot, place roast on hot rack and turn burner off below it. Close lid and let roast sear for 5 minutes. Turn roast, close lid and walk away. Check on roast, turning every 20 minutes or so. After about 1 hour, use thermometer to check temperature for desired degree of doneness. When roast is ready, remove from grill and let rest under foil and a dishtowel (foil first, towel second) for 5 minutes. Slice and serve. Each serving is about 3 ounces cooked.

Grilled, Eye Round Roast I switched Charcoal! Due to it always being windy when I'm trying to light a fire on my little grill, I've been using "Matchlight" with just a couple of squirts of Starter Fluid. I'm now using a mix of Charcoal, and Charcoal Briquettes. The charcoal gives the smell of a campfire cooking, and the briquettes help the fire last longer. I had company the day I made it, and once more during the week. The end result was that I got a total of 8 meals out of this. Since this meat is so dry, not a lot of marbling, this cut of meat is really not to be cooked well done. If it's well done, it'll taste dry, and tough like shoe leather. I reheat it, by dipping it in hot gravy, only long enough to heat up the meat without continuing to cook it.
