2 tablespoons butter or margarine
1 medium stalk celery, chopped (1/2 cup)
1 small onion, chopped (1/4 cup)
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups cooked rice
1/2 cup chopped walnuts
1/3 cup raisins
1/4 teaspoon paprika
4 slices bacon, crisply cooked and crumbled

Steps:

  • Melt butter in 10-inch skillet over medium-high heat. Cook celery, onion, salt and pepper in butter, stirring occasionally, until vegetables are tender; remove from heat.
  • Toss celery mixture and remaining ingredients. Use to stuff one 8- to 10-pound turkey.

One of the simplest and best of a number of turkey stuffings I've tried. Cooking time is not given, because it depends on size of the turkey. (Time for cooking rice is included in preparation time).

2 cups long grain white rice
1/2 cup chopped onion
1 cup chopped celery
2 cloves garlic
1/4 cup unsalted butter
1 cup raisins
1/2 cup dry sherry
1 bay leaf
1/2 teaspoon sage
1/2 teaspoon pepper
1/2 teaspoon marjoram
1/2 teaspoon thyme

Steps:

  • Cook the rice in 3½ cups water.
  • Sauté the onion through garlic in the butter.
  • Combine the rice and onion mixture with raisins through thyme, and mix thoroughly.
  • Stuff the bird just before cooking.
