4 cups rhubarb, chopped
1 (3 ounce) package strawberry Jell-O gelatin dessert
1 cup sugar
3 cups miniature marshmallows
18 ounces white cake mix
3 eggs
1/3 cup oil
1 cup water

Steps:

  • Preheat oven to 375°F.
  • Spray a 9 x 13 baking pan with cooking spray.
  • Place rhubarb in the the pan.
  • Mix the Jell-O and the sugar together and sprinkle evenly over the top of the rhubarb.
  • Top with marshmallows.
  • Mix the cake mix, eggs, oil, water, according to package directions, and pour over marshmallows.
  • Bake for 45 minutes, or until done.

1/3 cup oil
3 eggs
4 cups sliced fresh or frozen rhubarb (do not thaw)
1 cup sugar
1 pint (2 cups) whipping cream

Steps:

  • Heat oven to 350°F. Grease and flour 13x9-inch pan. In large bowl, combine cake mix, water, oil and eggs; beat at low speed until moistened. Beat 2 minutes at high speed. Pour into greased and floured pan.
  • Top batter evenly with rhubarb. Sprinkle with sugar. Pour cream over top.
  • Bake at 350°F. for 1 1/4 to 1 1/2 hours or until toothpick inserted in center comes out clean. Cool 30 minutes before serving. Store in refrigerator.
