1 c. milk
2 c. shredded cheddar
1/2 tsp. kosher salt
Pinch cayenne pepper

Steps:

In a medium saucepan over medium heat, melt butter. Add flour and whisk until fragrant, 1 minute.
Slowly add milk, whisking until no lumps remain. Reduce heat to medium-low, then add cheese and stir until melted. Immediately remove from heat and stir in salt and cayenne.
Serve immediately.

Steps:

Divide chips among six plates; set aside. In a saucepan, warm chili until heated through. , Meanwhile, in another saucepan, heat cheese over medium-low heat until melted, stirring frequently. Spoon chili over chips; drizzle with cheese. Sprinkle with onions and tomato.
