The creamy, nutty flavor of Havarti, and the addition of fresh dill, adds a new dimension to traditional mac and cheese. This easy-from-scratch recipe is ready in just 30 minutes.

2 cups uncooked elbow macaroni
2 tablespoons butter
2 tablespoons Gold Medal™ all-purpose flour
1 teaspoon salt
1 tablespoon grated or very finely chopped onion
2 cups milk
2 cups shredded Havarti cheese (8 oz)
1 tablespoon chopped fresh dill weed

Steps:

  • Cook and drain macaroni as directed on package.
  • In 10-inch skillet, melt butter over medium heat. Using whisk, stir in flour, salt and onion. Cook 2 to 3 minutes, or until mixture smells nutty and is lightly golden, stirring constantly with whisk.
  • Add milk. Continue to beat with whisk, scraping bottom of skillet until mixture heats to boiling. Mixture will thicken. Remove from heat; add cheese and dill. Stir with whisk until smooth. Stir in drained macaroni.
  • Serve with additional dill weed if desired.

My family loves this dish. I use a mandoline to make the potato slices uniform, and slicing go quicker.

1 teaspoon(s) butter or margarine, softened
1 - large garlic clove, peeled
1 1/3 cup(s) half and half
1 teaspoon(s) salt
1/8 teaspoon(s) freshly ground pepper
2 pound(s) russet potatoes, peeled and cut into 1/8-inch-thick slices
1 cup(s) havarti cheese, coarsley shredded
1/2 cup(s) finely shredded parmesan cheese

Steps:

  • Heat oven to 350 degrees F. Butter a 2-quart shallow baking dish.
  • Lightly crush garlic with side of knife. Heat half and half, garlic, salt and pepper in small saucepan over medium-high heat, until small bubbles appear around edge of pan; remove from heat and let stand 10 minutes. Discard garlic.
  • Meanwhile, pat potato slices with paper towels. Arrange half the potatoes in overlapping slices along the bottom of prepared dish. Pour half the cream mixture over the potatoes, then sprinkle with half the cheeses. Repeat with remaining potatoes, cream mixture and cheeses.
  • Bake 60 to 70 minutes, until top is a deep brown and potatoes are tender when pierced with a knife. **Parboiling or letting the sliced potatoes stand in cold water before baking will reduce their starch content and make the dish runny.

  • Combine mayonnaise and softened butter in a small bowl and set aside. Cook bacon until crispy, and blot with paper towels after cooking. Set aside. Serve immediately, sprinkled with salt and pepper as desired.
