Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Mix fajita seasoning and olive oil together in a large bowl. Add shrimp; toss to coat.
- Lay out seasoned shrimp in a single layer on a baking sheet. Add red bell pepper, yellow bell pepper, red onion, and jalapeno pepper; mix with shrimp and spread out evenly.
- Roast in the preheated oven until shrimp are opaque, 8 to 10 minutes. Transfer shrimp to a serving plate.
- Broil pepper mixture until lightly blackened, 2 to 3 minutes. Transfer to the serving plate with shrimp.

Steps:
- Add shrimp, salt, cumin, chile powder, oregano, garlic, lime juice to a large bowl or heavy duty zip-top plastic bag.
- Toss until spices are distributed and shrimp is well coated.
- Let marinate for 10 minutes.
- Heat oil in a large skillet (cast-iron is best).
- Add the green onions and peppers; cook and stir occasionally 2 minutes or until slightly softened.
- Add the shrimp and marinade; cook and stir constantly about 3 minutes or until the shrimp are pink.
- Spoon shrimp and vegetables into warmed tortillas; garnish with sour cream, cilantro and onion if desired.
- Fold up and eat.

Meanwhile, in a small bowl, mix sour cream and remaining cilantro., In a large nonstick skillet coated with cooking spray, heat 1 teaspoon oil over medium-high heat. Add onion and peppers; cook and stir until crisp-tender. Remove from pan., In same pan, heat remaining oil over medium-high heat. Add shrimp; cook and stir until shrimp turn pink. In a skillet, saute onion and peppers in 1 tablespoon oil until crisp-tender; remove and set aside., Drain and discard marinade from beef. Fajitas are so easy when you start with frozen chicken tenders! You may
need to cut the tenders into smaller bits before serving them, depending on
how stuffed you like the tortillas. We prefer them filled to the brim with
whole tenders in the mix. You may want to take more, um, delicate bites.
The best way to cut them to bits is to use kitchen shears after cooking.
The pickling brine from the jalapeño rings adds salt and a little sour
kick to the dish. The amount you use is not crucial (there’s already enough
liquid in the pot). Just stick a tablespoon into the jar and pull out some of
the rings with their brine. A little more or less won’t change the overall
character of the dish.
Unfortunately, because of the way the timing works in this recipe, you
can’t use fresh bell pepper strips. They get too soggy with the longer
cooking time that the chicken tenders require.
