Number Of Ingredients 5

6 (approximately 2 1/4 pounds) ripe bananas
1 tablespoon fresh squeezed lemon juice
3/4 cup light corn syrup
1 vanilla bean, scraped
1 1/2 cups heavy cream

Steps:

  • Place bananas in freezer and freeze overnight. Remove bananas from freezer and allow to thaw for 45 minutes to 1 hour. Peel bananas and place in bowl of food processor along with the lemon juice. Process for 10 to 15 seconds. Add corn syrup and vanilla bean seeds and turn processor on. Slowly pour in the heavy cream. Process until smooth. Chill mixture in refrigerator until it reaches 40 degrees. Transfer mixture to an ice cream maker and process according to manufacturer's instructions. Place mixture in an airtight container and freeze for 3 to 6 hours before serving.

Everyone needs a good recipe for ice cream. This is very rich, so generally one scoop should be enough (seriously!)

100 g dark chocolate (70%)
300 ml full-fat milk
85 g sugar
3 free-range egg yolks
300 ml whipping cream

Steps:

    1. Snap the chocolate into pieces, then place in a heavy-based saucepan with the milk.
    2. Heat gently, stirring, until smooth, then remove from the heat to cool slightly.
    3. Beat the sugar and egg yolks in a bowl until pale and thick. Stir in the cooled chocolate milk, then strain back into the pan.
    4. Cook the custard over a gentle heat, stirring all the time, until it thickens and coats the back of a wooden spoon. Don’t allow the mixture boil or it will curdle.
    5. Pour into a bowl and leave to cool, stirring occasionally.
    6. Once cooled, whip the cream into soft peaks, and fold through the chocolate mixture.
    7. Churn in an ice cream machine, according to the manufacturer’s instructions, until it’s frozen.

Remove top piece of waxed paper and invert dough onto a ungreased baking sheet. Remove second piece of waxed paper. Score the dough into eight pieces, each 3x2-1/2 in. Repeat with remaining dough. , Bake at 350° for 8-10 minutes or until puffed. Immediately cut along the scored lines and prick holes in each piece with a fork. Cool on wire racks., Cut ice cream into 16 slices, each 3x2-1/2x1 in. Place ice cream slice between two chocolate cookies; wrap in waxed paper or plastic wrap. Freeze on a baking sheet overnight. May be frozen for up to 2 months.
