Cook Time 1 hours 0 minutes

Yield 6 servings

Number Of Ingredients 11

1 medium sugar pumpkin
6 Granny Smith apples - peeled, cored and chopped
1 cup chopped walnuts
1 (16 ounce) can whole berry cranberry sauce
1 (20 ounce) can pineapple chunks, drained
¾ cup packed brown sugar
½ cup golden raisins
½ cup dark rum
2 teaspoons minced fresh ginger root
1 tablespoon freshly grated nutmeg
1 tablespoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Position rack in the center of the oven.
  • Cut out top of pumpkin, and set aside. Scoop out seeds with a metal spoon.
  • In a large bowl, stir together the apples, walnuts, cranberry sauce, pineapple, brown sugar, raisins, and rum. Season with ginger, nutmeg, and cinnamon, and mix well. Spoon the mixture into the cleaned pumpkin, and replace top.
  • Set pumpkin directly on a baking stone or a thick baking sheet. Bake for 1 hour in the preheated oven, or until pumpkin begins to soften. Remove from heat, and stir, scraping the sides gently, so that some pieces of pumpkin fall into the apple mixture.

BAKED PUMPKIN DOUGHNUTS RECIPE - NYT COOKING
These fuss-free (no electric mixer needed!) pumpkin doughnuts are flavored with cinnamon and nutmeg, classic spices we associate with fall. But they’re also loaded with pumpkin pureé, which makes them moist and flavorful and gives them their orangey hue. They’re finished with a simple — and forgiving — vanilla glaze that sets beautifully. If your glaze is too thick to dip, just add a little more milk. If your glaze is too thin and runs off the doughnut, add a little more confectioners’ sugar.

Total Time 40 minutes
  • As the doughnuts cool, make the glaze: In a medium bowl, combine confectioners’ sugar, milk and vanilla extract and whisk to combine until desired consistency. The glaze should drip slowly, not run, down the sides of the doughnut; add more milk if needed to thin it or more confectioners' sugar if needed to thicken it. Working one at a time, dip the top half of each cooled doughnut into the vanilla glaze. Serve immediately, or let cool completely, then store in an airtight container in a single layer for up to 3 days.

It’s the perfect mix of sweet and salty with benefit of a warm, gooey inside and a crispy, flaky crust on the outside. With a sprinkle of a few sliced almonds for a crunchy texture and a rich, nutty flavor, this starter is ideal menu item to any fall themed meal.
