250 grams Chicken breasts
2 sprigs marjoram
salt
150 milliliters Whipped cream
1 tablespoon Port wine
freshly ground peppers

Steps:

  • Rinse the chicken breasts and pat dry. Cut the chicken breasts into small cubes, cover with plastic wrap and place in the freezer for about 20 minutes.
  • Meanwhile, rinse the marjoram, shake dry, pluck the leaves and finely chop.
  • Whip about about half of the cream and place in the refrigerator.
  • Place the chilled chicken breast cubes in an electric blender, season with salt and pour some of the port wine and chilled whipped cream. Puree finely and add only as much remaining cream into it to get a creamy, glossy and soft mixture. Pass the puree through a fine sieve and mix with the remaining port wine. Stir in the marjoram and chilled whipped cream, and season with pepper.
  • Now the chicken puree is ready for further processing depending upon the recipe.

This is such a quick, delicious baked chicken recipe. Season to taste. I served mine with rice pilaf, but pasta also works.

1 (16 ounce) can crushed tomatoes
½ small white onion, thinly sliced
3 tablespoons balsamic vinegar
½ teaspoon ground cumin
4 skinless, boneless chicken breast halves
½ tablespoon Italian seasoning
½ tablespoon lemon pepper seasoning
½ teaspoon garlic salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine crushed tomatoes, onion, vinegar, and cumin in a small bowl.
  • Place chicken breasts in a baking dish. Season with Italian seasoning, lemon pepper, and garlic salt. Pour the tomato mixture on top.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
