  • Although many people find fried pumpkin crisps the simplest and most traditional choice, the truth is that you can boost their nutritional value and reduce the calories by baking them in the oven instead of making them fried. They may take a little longer but the result is equally delicious.
  • If you choose to bake them, you must first preheat the oven to 180 °C (6.3°F). Wash and peel the pumpkin well, and remove the seeds properly. You can buy a pumpkin that has already been peeled, chopped and washed if you want to save time.
  • Then, you must cut the pumpkin into chip shapes, preferably using a potato peeler to keep them really thin. If you have a mandolin slicer, use that to slice your pumpkin.If you plan on frying the crisps, heat the oil over a medium heat until it reaches 170°C (338°F), then carefully add the pumpkin chips to the pan, without piling them one on top of each other, and fry until golden brown.
  • If you're going to bake them in the oven, spread them evenly and in a single layer over a tray lined with baking paper, sprinkle with olive oil and bake at 180°C (356°F) for 10 to 15 minutes. Once browned take them out and season with salt, pepper and spices to taste.They're ready! 1-1/2 cups butter, softened
2 cups packed brown sugar
1 cup sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1 can (15 ounces) pumpkin
4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
2 cups quick-cooking oats
2 cups semisweet chocolate chips

Steps:

  • Preheat oven to 350°. Cream butter and sugars until light and fluffy. Beat in egg and vanilla. Beat in pumpkin. In another bowl, whisk together flour, baking soda, cinnamon and salt; gradually beat into creamed mixture. Stir in oats and chocolate chips. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until lightly browned, 10-12 minutes. Remove from pans to wire racks to cool.
