Stuffing is the bread and butter (literally) of the Thanksgiving table. Whether you call it stuffing or dressing, it is the component that can't be missed! This stuffing recipe is super easy to make because it is made in the pressure cooker, so it won't take up space in your oven. Celery and onion are sautéed in butter with herbs and then mixed with bread cubes. Pressure cook for 15 minutes and your dish is ready!

¼ cup unsalted butter
3 celery stalks, diced
1 yellow onion, diced
¾ teaspoon salt
½ teaspoon dried thyme
½ teaspoon dried sage
¼ teaspoon ground black pepper
1½ cups turkey broth
1 egg
5 cups small cubes day-old bread
100% oil cooking spray 

Steps:

  • Melt butter using Sauté mode set to Normal on pressure cooker. Add celery, onion, salt, thyme, sage, and black pepper and cook, stirring often, until vegetables have softened, 4 to 5 minutes. Press Cancel.  Remove inner pot from pressure cooker to help it cool down faster. Allow to cool for several minutes. Stir turkey broth and egg into vegetable mixture; stir in bread and continue stirring until it soaks up most of the liquid.  Line the steamer basket for pressure cooker with aluminum foil; spray with cooking spray. Pour stuffing mixture into lined basket and smooth the top.  Rinse out inner steel pot (it doesn’t have to be perfectly clean!) and fill with 1½ cups water. Place trivet and steamer basket full of stuffing on top.  Seal lid on pressure cooker, turn steam vent to Sealing, and cook on High pressure for 15 minutes. Allow pressure to naturally release.  Enjoy stuffing immediately, or transfer steamer basket to a sheet tray and spray top of stuffing liberally with cooking spray. Broil for 4 to 7 minutes, or until browned to your liking.

2 tablespoons olive oil
1 medium celery rib, chopped
1 small onion, chopped
2 cups reduced-sodium chicken broth
1 teaspoon poultry seasoning
1/4 teaspoon salt
1/4 teaspoon pepper
8 cups unseasoned stuffing cubes

Steps:

  • Select saute setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, cook and stir celery and onion until crisp-tender, 3-4 minutes. Press cancel. Stir in broth and seasonings. Gently stir in stuffing cubes; toss to combine. Transfer to a greased 1-1/2-qt. baking dish. , Place trivet insert and 1 cup water in pressure cooker. Cover baking dish with foil. Fold an 18x12-in. piece of foil lengthwise into thirds, making a sling. Use the sling to lower the dish onto the trivet., Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 15 minutes. Let pressure release naturally for 10 minutes; quick-release any remaining pressure. Using foil sling, carefully remove baking dish. Let stand 10 minutes.
