I met a lady sorting through a bin of hams at the grocery store. I had missed those and she commented they were the best. They were smoked, mostly boneless, butt portions. Well, they were half the price of the sliced one I had in my basket, so I asked her how she cooked it. She wraps the ham in foil and cooks in the crock pot until done. The foil keeps the juices in, she said. So I tried it for Christmas Dinner. Superb.

Cook Time 7 hours

Number Of Ingredients 2

6 lbs smoked ham
1/2 cup pepper jelly (or favorite glaze)

Steps:

  • Score surface of the ham by lightly cutting the surface in a diamond pattern or criss-cross pattern.
  • Trim the ham if necessary to fit the crock pot.
  • Wrap in one piece of heavy duty foil.
  • Place the ham, cut portion down in the crock pot.
  • Cook on low for 6 to 8 hours until the internal temperature of the ham is 140°F
  • Remove the foil and drain the juices.
  • Brush with your favorite glaze or a pepper jelly. I like Pineapple Habenero pepper jelly.
  • Return to crock pot and cook until the internal temperature is 150 to 160°F.

There's a standard way to make smoked pork ribs and, up until now, it did not include pre-slicing them. This is an amazing recipe/technique and I recommend you try it.

1-2 racks of baby backs ((, spare ribs or a mix of the two))
Foil pans
Foil
Jeff’s barbecue sauce recipe
Jeff’s original rub recipe

Steps:

  • Step 1: Rinse and Pat Dry
  • Step 2: Remove Membrane
  • Step 3: Slice
  • Step 5: Get the Smoker Going
  • Step 6: Smoke for 2 hours
  • Step 7: Add Rub and Braise in Foil
  • Step 8: Add the Main Layer of Rub and Sauce
  • Step 9: Finish Smoke Cooking
  • Step 10: Serve Up
