POTATO SKIN SMASH BURGER – RECIPE CHAMPIONS



Potato Skin Smash Burger – Recipe Champions image

Yield 4 burgers

Number Of Ingredients 9

4 large potatoes
4 strips of bacon
1 cup shredded cheddar cheese
2 scallions, chopped
1/2 cup sour cream
3 cups cooking oil
1/2 lb ground beef
2 strips of bacon
4 slices American cheese

Steps:

  • Using a fork, pierce a few holes on either side of the potato. Place on a microwaveable safe plate and microwave on high for 5 minutes.
  • Take the potatoes out, flip them, and cook for an additional 3 minutes in the microwave.
  • In the meantime, cook the 6 strips of bacon. If cooking on a stove top, fry the bacon for 3 minutes on one side on medium heat, drain the grease and cook for an additional 5 minutes on the other side.
  • If cooking in the oven, line a baking tray with aluminum foil. Lay out the strips and cook at 375º F for 10 minutes
  • Flip the strips, degrease the pan and cook for an additional 5-10 minutes depending how soft or crispy you like your bacon.
  • Heat the cooking oil to 375ºF. Cut the potatoes in half on the long side. Using a knife, trace a border around the center about ½ an inch from the edges.
  • Using a spoon, scoop out the inside to create a bowl shape.
  • Fry the potatoes for 3-5 minutes until they become golden brown and crispy.
  • Take the skins out of the oil, and season them with salt. Immediately add the shredded cheese to each one.
  • Once all the potatoes have cheese on them, cook them in a 350º F oven for roughly 5 minutes or until the cheese melts.
  • Chop 4 strips of bacon for the potato skins.
  • When the skins come out, equally add the bacon, followed by the sour cream, and chopped scallions to each one.
  • Heat a skillet or frying pan to medium high heat. Separate the meat into 4 equal patties.
  • Place the burger on the pan or skillet. Add a small piece of parchment paper and using a spatula, and something to press it, press the meat in the skillet or frying pan as thin as possible.
  • Season with salt. After a minute or so, and when the edges of the meat are starting to crisp, flip the burger, season the other side with salt and cook for another minute.
  • Add a slice of American cheese to each burger patty, followed by a strip of bacon and stack them. Repeat for the other burgers.
  • On one of the potato skins, spread some of the sour cream. Add the stacked burgers to it, and cover with another potato skin to make the burger. Repeat for remaining burgers. Enjoy!

Number Of Ingredients 16

1 cup butter, softened
2 cups sugar
2 large eggs, room temperature
1 cup cold mashed potatoes (without added milk and butter)
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking soda
1 cup whole milk
1 cup chopped walnuts or pecans
CARAMEL ICING:
1/2 cup butter, cubed
1 cup packed brown sugar
1/4 cup evaporated milk
2 cups confectioners' sugar
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add 1 egg at a time, beating well after each addition. Add potatoes and vanilla. Combine the flour, cocoa and baking soda; gradually add to creamed mixture alternately with milk, beating well after each addition. Stir in nuts. , Pour into 2 greased and floured 9-in. round baking pans. Bake at 350° until a toothpick inserted in the center comes out clean, 25-30 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely., For icing, in a saucepan over low heat, cook butter and brown sugar until butter is melted and mixture is smooth. Stir in evaporated milk; bring to a boil, stirring constantly. Remove from the heat; cool to room temperature. Stir in confectioners' sugar and vanilla until smooth. Spread between layers and over top of cake.
