1 cup Port Wine ((for reduction))
1 8 oz package cream cheese (, softened)
3 cups sharp cheddar cheese
1 tbsp fresh chives (, chopped & divided)
salt and pepper to taste
3/4 cup chopped pecans (, walnuts or hazelnuts, toasted)

Steps:

  • In a small saucepan, boil 1 cup of port until it is reduced into a syrup of about 2 tablespoons.
  • In a mixing bowl, cream together the cream cheese and cheddar cheeses. Season with salt and pepper to taste.
  • Then, by hand swirl in the port reduction. Do not fully combine.
  • Transfer into a crock for serving and top with a scattering of chopped walnuts and fresh herbs or roll into a 10 - 12 in log or ball and then roll into the nuts and fresh herbs

I love this from the store, but too expensive. I found 1 recipe for this, and it didn't work. I messed around with it until it was what I wanted. The way my staff at work were acting, they think this is the best. I do too, and hope the people at recipezaar enjoy it as well.

Number Of Ingredients 5

1/4-1/2 cup port wine
1/4 cup butter, at room temperature
16 ounces cheddar cheese, grated
8 ounces cream cheese
1 cup pecans, chopped

Steps:

  • In a food processor, combine cheddar cheese and cream cheese. Pulse the food processor on and off until the two are just mixed. Put this cheese mixture into a bowl.
  • In the food processor, process butter until smooth. While the machine is running, pour in small amounts of Port Wine, processing steadily until well mixed.
  • Add the port wine/butter mixture to the cheese mixture. Mix together with a spoon.
  • Form cheese into a ball, roll in chopped pecans, or use walnuts if you'd rather.
  • Serve with crackers.
  • Enjoy!

  • "The applesauce in the recipe is NOT a low fat substitute. However you may eliminate it and substitute butter, margarine, or baby food plums-- or even fresh plum or pear puree. The applesauce or plums impart a nice highlight to the flavor. I only made the bread once, and used pureed Japanese Satsuma plums in the recipe, as I have trees in my yard. Bread texture should not be affected by which ever you choose to use. I also loaded up on the port...to almost 1/4 cup. But I am a port nut. The recipe is for the bread machine. In manual adaptation, be prepared to add up to 1 1/2 cups of additional flour. I would start with the amount called for and increase flour in 1/4 cup increments, til proper dough texture is achieved during kneading... Also, you may omit the blue cheese with no ill side affects and make this a TRUE PORT BREAD. The sharper the blue cheese--the stronger the flavor of the bread.
