Pork Rib Roast with Mustard Sauce

4 teaspoons kosher salt
1 tablespoon finely chopped fresh thyme leaves
1 teaspoon garlic powder
1 teaspoon freshly ground black pepper
1 teaspoon dried thyme
1 pork rib roast, about 6 pounds with 8 ribs, bones frenched
¼ cup/60 milliliters whole-grain mustard
¼ cup/60 milliliters mayonnaise
2 tablespoons plain yogurt
2 tablespoons sour cream
1 tablespoon finely chopped fresh chives
1 teaspoon finely chopped fresh thyme leaves
⅛ teaspoon kosher salt
⅛ teaspoon freshly ground black pepper

Steps:

  • Combine the rub ingredients. Season the roast all over with the rub, using more on the meaty parts. Allow the roast to stand at room temperature for 30 minutes before grilling.
  • Prepare the grill for indirect cooking over medium heat (350° to 450°F). 
  • Grill the roast over indirect medium heat, with the lid closed, until an instant-read thermometer inserted into the center of the roast reaches 145ºF, 1½ to 2 hours, rotating and turning over every 30 minutes so the roast cooks evenly. Remove the roast from the grill, tent with foil, and let rest for 15 to 30 minutes (the temperature of the roast will rise 5 to 10 degrees during this time).
  • Meanwhile, whisk the sauce ingredients. Cut the roast into slices and serve warm with the sauce.

2 tablespoons chicken bouillon
1 tablespoon garlic powder
1 teaspoon black pepper
1 teaspoon cooking oil
1 (4 to 5-pound) Boston butt, boneless

Steps:

  • In a small bowl, mix together the bouillon, garlic powder, and pepper to create the rub. Next, squirt the pork roast with some oil and liberally apply the rub to all sides of the roast. Cover the pork roast and let it sit overnight in the refrigerator.
  • Preheat your smoker using pecan wood to 225 degrees F.
  • Place the roast into the smoker and cook for about 4 hours. Remove the roast from the smoker and wrap it tightly in aluminum foil. Place the pork roast inside a 225 degree F oven until the internal temperature reaches 200 degrees F. Remove the roast from the oven and let it rest for 5 to 10 minutes before slicing.
