THIS IS ONE OF MY HUBBY FAVORITE. IT IS KNOWN AS AN FILIPINO DISH. LOCALS HERE IN HAWAI'I LOVES IT! MY HUBBY IS OF AN LOCAL FILIPINO ANCESTRY.

bottle(s) pimento
slice(s) bell peppers
can(s) tomato sauce
clove(s) garlic
- bay leaf
pinch(es) salt and pepper

Steps:

  • SAUTEED ONIONS & GARLIC IN COOKING OIL
  • ADD PORK (DRAIN)
  • ADD TOMATO SAUCE & BELL PEPPERS
  • COOK ON MEDIUM HEAT TILL BELL PEPPER SOFTEN
  • ADD PIMENTO
  • FROZEN PEAS
  • BAY LEAF
  • SIMMER
  • SALT & PEPPER TO TASTE
  • LOWER HEAT

2 teaspoons Canola Oil
1 pound Lean pork Cut into chunks
2 cloves Garlic Chopped
2 tablespoons Reduced-sodium soy sauce
1 14 1/2 oz Can of spicy stewed tomatoes
1 7 oz Jar roasted red peppers in brine Drained and chopped
1 4 oz Jar chopped pimientos with juice
1/8 teaspoon Ground cinnamon
1/8 teaspoon Ground black pepper
1 Bay leaf
1 10 oz Package of frozen petite peas
3 cups White or brown rice

Steps:

  • "1. Heat the oil in a large nonstick skillet. 2. Sauté the pork and garlic for 10 min. 3. Drizzle the soy sauce over the pork. 4. Stir in the tomatoes, red peppers, pimientos, cinnamon, black pepper, and bay leaf. 5. Bring to a boil; reduce heat, cover and simmer for another 20 mins. 6. Meanwhile, cook the rice as directed on the package. 7. Add the peas to the pork mixture. Return to a simmer. 8. Cover and simmer for 5 more mins. 9. Remove the bay leaf. Serve the meat over rice. "
