These pork chops are deep fried and served on a stick. The Italian marinade makes a flavorful seasoning.

8 6 ounces boneless pork loin chops, about 1 inch thick
½ cup bottled Italian salad dressing
Peanut oil
8 wooden skewers or dowels 8x1/4 inch thick
Honey mustard or bottled barbecue sauce

Steps:

  • Place chops in a resealable plastic bag set in a shallow dish. Pour salad dressing over chops.; seal bag. Marinate in the refrigerator for 1 hour, turning bag occasionally.
  • Meanwhile, preheat oil to 350 degrees F. Drain chops, discarding marinade. Insert a wooden skewer into a short side of each chop. Fry the chops, half at a time, for 5 to 8 minutes or until 160 degrees F. (To test for doneness, carefully remove one chop from the hot oil. Insert an instant-read thermometer into side of chop.) Be cautious of splattering oil. Maintain oil temperature around 350 degrees F. Remove chops from hot oil and drain on wire racks. Serve chops with honey mustard. Makes 8 chops.

These meaty "lollipops" were inspired by the thick, juicy chops served along the route of RAGBRAI (the Register's Annual Great Bike Ride Across Iowa).

6 8x1/4-inch-thicks wooden skewers or bamboo chopsticks
1 teaspoon paprika
1 teaspoon packed brown sugar
½ teaspoon onion salt
¼ teaspoon garlic powder
¼ teaspoon ground ginger
¼ teaspoon ground cinnamon
¼ teaspoon ground cumin
¼ teaspoon dry mustard
¼ teaspoon cayenne pepper
¼ teaspoon freshly cracked black pepper
6 boneless pork top loin chops, cut 1 1/4 to 1 1/2 inches thick
1 tablespoon soy sauce or teriyaki sauce

Steps:

  • To prevent wooden skewers or chopsticks from burning while grilling chops, soak them in water for 30 minutes before inserting into chops. Or, if you like, don't serve the pork chops on a stick.
  • For rub: In a small bowl, combine paprika, brown sugar, onion salt, garlic powder, ginger, cinnamon, cumin, mustard, cayenne and black pepper. Brush chops on both sides with soy sauce. Sprinkle rub over chops and rub in with your fingers. Insert a wooden chopstick into a short side of each chop.
  • For a charcoal grill, arrange medium-hot coals around a drip pan. Test for medium heat above pan. Place pork chops on grill rack over pan. Cover; grill chops 30 to 35 minutes or until chops are slightly pink in center and juices run clear (145°F to 160°F). (For a gas grill, preheat grill. Reduce heat to medium. Adjust for indirect cooking. Place chops on grill rack over burner that is turned off. Cover and grill as directed.) Remove from grill; let stand for 3 minutes before serving.
