My grandma's secret recipe to make real Sichuan red oil doubanjiang

150 g dried board beans ( , peeled)
0.3 g kit starter
800 g to 1000g fresh pepper
3 tbsp. minced ginger ( , optional)
30 ml white spirit ( , or other hard liquor)
250 ml cooled boiled water
50 g for beans +40g (for fresh peppers) salt
2 tbsp. fermented sticky rice
oil as needed
a Jar
2 star anises
3-4 bay leaves
1 tablespoon red Sichuan peppercorn
1 small piece of Chinese cinnamon
1/4 teaspoon cloves
1/4 teaspoon fennel seeds
1 tsaoko
2 cardamons

Steps:

  • Make fermented fava beans
  • Make Doubanjiang mixture

Spicy chicken nuggets recipe - Simple Chinese Food image

Chicken breast chicken meat is tender and delicious, and the methods are varied and casual. Today, I used Pixian Douban Sauce to taste and stir-fry. It is very fresh and tender. It is very good to entertain guests during the festive season.

400 grams Chicken breast
1 tablespoon Pixian Doubanjiang
1 piece carrot
1 tablespoon sesame
1 piece onion
1 tablespoon Oyster sauce
3 tablespoons oil

Steps:

  • Materials ready
  • Cut the chicken breast into about 1.5cm square pieces, add a spoonful of starch and two spoonfuls of light soy sauce
  • Mix well and marinate for 10 minutes
  • Dice the onion, the size is the same as the chicken
  • Sliced carrots
  • Wide oil in wok
  • When the oil is hot for 5 minutes, add the chicken breast
  • Fry for about 5 minutes, deep-fry the chicken skin, and remove it for later use.
  • Leave the oil at the bottom of the wok, add ginger and Pixian bean paste. Stir-fried red oil
  • Add carrot slices and stir fry
  • Stir-fry the carrots until soft, add onions and sauté
  • Pour in the fried chicken
  • Add some salt appropriately, add oyster sauce
  • Finally, sprinkle with sesame seeds and stir-fry evenly.
