Instead of buying pita bread, make it yourself! Our homemade pita recipe comes out warm, soft, and pillowy, with the perfect pocket.

1 c.

warm water

2 tsp.

active dry yeast

1 tsp.

granulated sugar

3 c.

all-purpose flour, divided

1 tbsp.

extra-virgin olive oil

1 1/2 tsp.

kosher salt

Steps:

  • In a large bowl, combine warm water, yeast, and sugar and stir until dissolved. Stir in ½ cup flour and let sit for 15 minutes, until mixture foams.  Add oil, salt, and 2 cups flour (reserving ½ cup) and stir with a wooden spoon until a shaggy mass forms. Dust a clean surface with some of reserved flour and knead until smooth and elastic, about 7 minutes, adding more of the reserved flour if the dough is too sticky. Dough should be soft and moist. (You can cover the dough and let rest 10 minutes if you need a rest from kneading.)  Place dough in a clean large bowl and cover with plastic wrap. Leave in a warm place until dough has doubled in size, about 1 hour.  Place a pizza stone or large cast-iron skillet in your oven and preheat to 500°. Lightly dust a clean surface with flour. Punch down dough and turn it out onto surface. Divide dough into 8 pieces and roll into balls. Cover with a towel or plastic wrap and let rest 10 minutes.  Working one at a time, roll each round into a ¼”-thick circle about 8” wide, sprinkling dough with extra flour if it starts to stick.  Working as quickly as possible, open your oven and place as many pitas that will fit on your skillet or stone without touching. Let bake until an air pocket balloons and the pita begins to turn golden brown, 3 to 5 minutes. Repeat with remaining rounds.  Cover baked pitas with a clean kitchen towel to keep warm.

A RIGHT FAMILY CHRISTMAS GAME | JUST A PINCH RECIPES
This is by far one of the funniest Christmas games to play with a group of people. It is a unique story that is read out loud and every time the word "right" or "left" is used you must pass your gift accordingly. The first time I played was at work and they chose to use "white elephant" gifts. Meaning that they were to be $1 dollar gifts. It was so much fun but some really strange things got upwrapped to say the least. lol Well, I loved it so much I added this game into my Cookie Exchange and made it a Christmas ornament instead. You'll have fun either way. But, be prepared for laughter and the reader stopping at certain points because when there is alot of people it gets crazy!! I hope you enjoy this game.

  • For the beans: Rinse beans in cool water; pour them into a large pot, cover with water by 2 to 3 inches. Slice the bacon into 1-inch thick pieces and throw it into the pot. Bring to a boil, then reduce heat and cover. Simmer for 2 hours, or until beans are tender. Add additional hot water to the pot as needed. Beans should have a thick broth. Toward end of cooking time, add salt and pepper and season to taste. Don’t over-salt. For a variety try adding chili powder, garlic or Tabasco. Serve in a bowl with cornbread. Can be served with small bowls of grated cheese, chopped onions, chopped fresh jalapenos, sour cream, and/or cilantro.For the cornbread: Preheat oven to 450 F. Heat shortening over medium heat in an iron skillet (10-12 inch size), muffin pan, or other oven safe pan. Combine cornmeal, flour, and salt in a mixing bowl. In a separate bowl, combine buttermilk, milk, and egg. Mix the wet ingredients into the dry ingredients. Add baking powder and baking soda. Stir to combine. Add ¼ cup of the melted shortening, stirring constantly. Pour the batter into the hot pan, smoothing the surface with a spatula. Bake for 20 to 25 minutes or until golden brown on top.

Thoroughly grease/flour a 9 x 13 baking pan (or spray with baking spray.)In a mixer fitted with the whisk attachment, beat butter until it's soft and fluffy, about 30 seconds. Add the sugar in batches, about a fourth at a time. Scrape the sides of the bowl, then mix again until totally combined and fluffy, about 2 minutes. Add eggs one at a time, beating for 20 seconds on medium after each addition. Add vanilla and mix until combined.In a separate bowl, stir together flour, baking powder, and salt. Alternate adding the flour mixture with the milk with the mixer on medium-low until all the ingredients have been incorporated. Scrape the sides of the bowl and turn the mixer on high for ten seconds. Remove bowl from mixer stand and fold in trinkets so that they're evenly distributed. (Note that you can also tightly wrap trinkets in small pieces of aluminum foil if you prefer.) Use an offset spatula to even out the surface, then bake for 22 to 25 minutes, until cake is just set and a toothpick comes out clean. Allow cake to cool completely before icing.ICINGIn a mixer fitted with the paddle attachment, whip the butter until totally soft and smooth. Sift together the powdered sugar, cocoa, and salt, then add gradually to the mixer, scraping the sides as you go. (When combined, mixture will be very thick/crumbly.) Drizzle in cream and whip on high until smooth, scraping the sides as you go. Ice the cooled cake in the pan.Cut 12 to 16 slices of cake with a serrated knife, being careful not to tear out any trinkets along the way (most of them settle close to the bottom.)***Be sure to tell everyone that there are trinkets in the cake beforehand so they can watch for them!Each trinket means different things.
