24 dinner rolls, such as King's Hawaiian Original Hawaiian Sweet Rolls
1/2 cup salad dressing spread, such as Miracle Whip
Hot sauce, to taste 
24 thin slices deli roast beef 
12 slices pepper Jack cheese 
1 stick butter 
1 tablespoon lemon pepper 
1 tablespoon Dijon mustard 
6 dashes Worcestershire sauce 

Steps:

  • Preheat the oven to 350 degrees F.
  • Slice the rolls in half and place the bottoms in a single layer in a 9-by-13-inch dish.
  • Mix the salad dressing and some hot sauce together in a small bowl. Spread the mixture on the rolls in the dish. Layer on the roast beef and then the cheese over the rolls. Place the top halves of the rolls on the cheese.
  • In a small saucepan over medium-low heat, melt the butter with the lemon pepper, mustard and Worcestershire sauce. Drizzle or brush the butter mixture over the sandwiches. Cover with foil.
  • Bake until the cheese melts, 10 to 12 minutes. Uncover and cook until lightly browned, about another 2 minutes. Serve hot.

16-ounce package dinner rolls

1 tbsp.

vegetable oil

1/2

yellow onion, peeled and chopped

1 1/4 lb.

ground sirloin (90/10)

1 1/2 tbsp.

Worcestershire sauce

1/2 tsp.

kosher salt

1/2 tsp.

ground black pepper

1/4 c.

mayonnaise

2 tbsp.

ketchup

1 tbsp.

mustard

1

8-ounce bag shredded cheddar-jack cheese

1/2 c.

dill pickle slices

2 tbsp.

olive oil

1 tbsp.

everything bagel seasoning

Steps:

  • Preheat the broiler. Remove the rolls from the packaging in one piece. With a serrated knife cut crosswise through the all of the rolls at once, to divide the top half from the bottom (keeping the sides of the rolls intact). Place both halves cut-side up on a sheet tray and broil for 2 minutes until lightly toasted. (If using slider rolls, separate the tops from the bottoms and place cut side up on the sheet tray, sides touching; broil as instructed). Set aside. Heat the vegetable oil in a large skillet over medium heat. Add the onion and cook for 3 minutes until just slightly softened. Add the ground sirloin and cook, breaking up into small pieces with a wooden spoon. Increase the heat to medium-high. Add the Worcestershire sauce, salt, and black pepper, and stir well to combine. Cook until the beef is no longer pink and the liquid from the pan has almost fully evaporated, about 8 minutes. Remove from the heat.   Preheat the oven to 375°. In a small bowl, mix together the mayonnaise, ketchup, and mustard. Spread the cut sides of the rolls with the mayonnaise mixture, then sprinkle with half of the cheese in an even layer. Layer the meat mixture over the cheese, then top with the remaining cheese and the pickles. Cover with the top half of the rolls. Brush the tops of the rolls all over with olive oil and sprinkle with everything bagel seasoning. Bake for 10 to 12 minutes or until the cheese is melty and the tops of the rolls are golden and toasted. Pull sliders apart and serve warm.

  • Slice rolls in half. Mix together mayo, grated onion, poppy seeds, spicy mustard, horseradish, and Worcestershire. Taste it and adjust ingredients however you wish.To assemble, spread dressing on top and bottom buns. Lay on roast beef or ham, then one or two slices of cheese (I cut them to fit the small buns.) If you're using Cheez Whiz, spread a layer on the top bun. Wrap each sandwich in a foil square, and either keep in the fridge or bake right away. To bake the sandwiches, put them on a baking sheet in a 350 degree oven for 15 to 20 minutes. The buns should be slightly crusty and the cheese should be melted. Great for a crowd!

  • For the Buffalo sauce: Melt butter or margarine in a small sauce pan on medium. Add celery salt, cayenne red pepper, chili powder and salt. Cook for 1 minute. Add hot sauce and stir. Cook for 2 to minutes, you’ll notice the sauce bubble up a little bit. Continue stirring and then lower heat to low. For the chicken :Add 1 1/2 to 2 inches of oil to a nonstick skillet or Dutch oven. Turn heat to medium. Prep the chicken. Cut into cutlets, lengthwise, and then cut each piece in half. You’ll have 12 pieces, enough for 12 sliders. Add eggs to a shallow dish and beat the eggs. Add chicken to the shallow dish and ensure all chicken is coated with eggs. Line a plate or baking sheet with clean paper towels. Set aside. Add flour, salt, black pepper and cayenne pepper to a large resealable plastic bag. Seal the bag and mix ingredients together using your fingers, flipping the bag up and down. Open the bag, and using a fork or your fingers, add the chicken to the bag. Seal the bag and using your fingers on the outside of the bag, move the chicken around to ensure all pieces of chicken get an even coating of the flour mixture. Once oil is 350ºF, carefully add chicken and cook for 2–3 minutes on each side. (Depending on what size skillet or Dutch oven you use, you might have to cook the chicken in batches.) Once chicken is done cooking, place on the prepared plate or baking sheet to allow oil to drain. Mix Buffalo sauce in case it has separated. In batches, add chicken to a mixing bowl and then add the Buffalo sauce. Using tongs or a large spoon, flip chicken over and add sauce to ensure it’s coated. Add chicken to a clean plate and repeat with the remaining chicken. To assemble the sliders, slice dinner rolls in half. In assembly line fashion, add lettuce to all of the rolls. Place one slice of tomato on each roll. Drizzle ranch or blue cheese dressing on top of the sliced tomato. Add one piece of chicken to each roll. Add the top half to each slider and serve immediately.

Form the turkey into equal-sized patties, about 8 burgers, though I usually make mine the size of the buns I have so you might get up to 10 sliders.Heat a large skillet over medium heat. Add the olive oil. Once the oil is hot, add the turkey sliders and cook until golden and brown on both sides and cooked through, about 5 minutes each side.
