4 Eggs
4 tbsp. Water
1/8 tsp. Salt
1/8 tsp. Ground Pepper
2 slices Cooked Bacon, Crumbled
2/3 c. Diced Tomato
2 tbsp. Grated Cheddar Cheese
1/4 Avocado, diced

Steps:

  • Spray 12-ounce microwave-safe coffee mugs with cooking spray.Crack 2 eggs into each mug, add 2 tablespoons water to each and whisk to combine. Season with salt and pepper. Stir in bacon and tomato, dividing evenly between the mugs.Place mugs in the microwave and cook on high for 60 seconds.Stir the mixture in each mug and cook in the microwave until egg is set, about 60 to 90 seconds more.Sprinkle the cheese and avocado over top. Serve immediately.

Freshly Grated Cheddar Cheese

Steps:

  • Preheat the oven to 350 degrees. Generously spray 18 muffin cups with nonstick cooking spray.In a large skillet over medium-high heat, crumble and cook the sausage until it’s about ¾ brown. Add the onion and reduce the heat to medium-low. Stir and continue cooking the sausage, stirring occasionally, until the sausage is cooked and the onion is soft. Remove this from the heat and set it aside to cool.Crack the eggs into a bowl and add the salt, pepper, and chili powder. Whisk it until it’s combined. Add the cheddar and bell pepper and stir them in. When the sausage has cooled slightly, Add it by the spoonful and stir it until it’s all mixed together.Use a measuring cup to scoop the mixture into the muffin cups and bake them for 20-22 minutes, until they’re puffy and just barely set. Within a minute or two, the casseroles will start to flatten just a little bit. This is normal! Run a knife along the edges of each muffin cup and lift them out of the pan. Serve them warm with a little fruit.Helpful tip: The casseroles freeze beautifully! Just seal them tightly in plastic zipper bags. Thaw and reheat in the microwave when you’re ready to serve them.Change it up!• Substitute half the diced bell pepper with finely chopped mushrooms.• Add several dashes of hot sauce to the egg mixture for a little more spice.• Substitute pepper jack cheese for the cheddar.

  • In a large saucepan over medium-low heat, combine milk, cloves, 1 teaspoon of the vanilla, cinnamon, nutmeg, and kosher salt. After mixture has warmed for 5 minutes, turn up heat between medium and medium-high. Stir regularly to avoid scorching, just until it comes to a boil. Turn off heat. In a large bowl, combine egg yolks and sugar. Whisk briskly until mixture is lightened in color and a bit fluffy, with visible ridges and ripples appearing when you whisk. Very slowly pour the hot milk mixture into the eggs, whisking vigorously all the while. You want to incorporate hot with cold slowly, to not "cook" the eggs to a scrambled consistency. Then pour everything back into the saucepan over medium heat. Stir constantly for about 5 minutes, until mixture is thickened and foamy. Do not allow mixture to boil. Strain to remove cloves. Let cool for about 1 hour. Stir in rum, brandy if desired, half-and-half, and remaining 2 tablespoons of vanilla. Refrigerate overnight to thoroughly chill and let flavors meld. Leave out the alcohol, if you prefer. Nothing else needs to be altered, and it will still taste wonderful! Before serving, whip heavy cream until softly firm. Fold whipped cream into eggnog mixture. Pour into individual glasses and garnish with freshly grated nutmeg.

  • Preheat the oven to 400 degrees.Bake the potatoes until almost tender (potatoes should still have a little bite) 45 minutes to 1 hour. Allow to cool, and then peel and grate them. Season well with salt and pepper.INCREASE OVEN TEMP TO 425 DEGREES.Spray two muffin pans generously with cooking spray. Scoop 3 to 4 tablespoons of grated potato into each muffin cup. Use your fingers to gently press the sides and bottom in each muffin hole to make a nest (don't press the potatoes firmly against the pan; they should sit lightly in the pan.) Spray again (very lightly!) with cooking spray. Bake for 15 to 20 minutes. Watch and make sure they do not burn. (If they seem like they're not browning, kick up the temp to 450.) Remove when the nests are golden brown.Allow the nests to cool. Crack an egg into each one. Sprinkle with salt and pepper and bake until the whites are set, about 15 minutes.   • For the cake: Prepare a 12-cup standard Bundt pan with non-stick baking spray. Preheat the oven to 350°F.  In the bowl of an electric mixer fitted with a paddle attachment, beat the butter and sugar on medium until smooth and creamy, about 4 minutes. Add the eggs, one at a time, beating well after each addition. With the mixer on low, add one-third of the flour, and all of the baking powder, salt and nutmeg. Add one-half of the eggnog, and all of the bourbon and vanilla bean paste. Add another one-third of the flour, then the remaining eggnog, and the remaining flour, mixing well to combine between each addition. Transfer the batter to the prepared Bundt pan and smooth the top. Bake until a toothpick inserted in the center of the pan comes out clean, 50 minutes to 1 hour. Let the cake cool in the pan for 10 minutes. Turn the cake onto a wire rack and cool completely, about 1 hour. For the icing: In a medium bowl, whisk together the powdered sugar, eggnog, bourbon, and vanilla bean paste until smooth. Spoon the icing over the cake and let stand until hardened, about 15 minutes.
