Homemade Ranch Dressing - Pioneer Woman Ranch Dressing Recipe image

clove (to 2 cloves) garlic

Salt, to taste

1/4 c.

Italian flat-leaf parsley

2 tbsp.

fresh chives

1 c.

(real) mayonnaise

1/2 c.

sour cream

buttermilk (as needed to desired consistency)

White vinegar (optional, to taste)

Worcestershire sauce, to taste (optional)

Fresh dill (optional, to taste)

Cayenne pepper (optional, to taste)

Paprika, to taste (optional)

Fresh oregano (optional, to taste)

Tabasco (optional, to taste)

Steps:

  • Mince the garlic with a knife and then sprinkle about an 1/8 to ¼ teaspoons of salt on it and mash it into a paste with a fork. Chop the parsley, chives and any of the optional herbs very finely and add to the garlic.  In a bowl, combine all ingredients, adding other optional ingredients as you wish, tasting frequently and adjusting seasonings as needed. Chill for a couple of hours before serving, thin with milk or buttermilk if desired. (Don’t overdo the garlic or you’ll be up all night, emailing me about your heartburn.)

1/3 c.

sour cream

1 tbsp.

mayonnaise

Salt and pepper

1 tbsp.

white vinegar

4 c.

frozen green peas, almost totally thawed

slices bacon, cooked until crisp and chopped

1/2

small red onion, halved and sliced very thin

6 oz.

cheddar or American cheese, cut into small cubes

3 tbsp.

minced fresh parsley

Steps:

  • Mix the sour cream, mayonnaise, salt, pepper, and vinegar together to make the dressing. Add more salt and pepper to taste. Stir 2/3 of the dressing into the peas until the peas are coated. Gently stir in the bacon, onion, cheese, and parsley until all combined. Taste and adjust seasonings. Cover with plastic wrap and refrigerate 2 to 4 hours before serving. (Pop the extra dressing in the fridge, too.) Remove from the fridge and stir in the rest of the dressing to your liking. Sprinkle with more parsley before serving.

  • Preheat oven to 400 degrees.In a large skillet, cook and crumble the sausage until brown. Remove from skillet and drain on a paper towel. Pour off any excess fat. Add onions and bell peppers to the skillet and cook over medium-high heat until the veggies are soft and golden brown, about 7-8 minutes. Remove from heat and set aside. To build the skillet, place 1/3 of the cheese in a medium-sized ovenproof skillet. Add half the sausage. Add another third of the cheese, then as much of the veggie mixture as you'd like (you may have a little left over.) Add almost all of the remaining cheese, the rest of the sausage, then whatever cheese you have left. Sprinkle the top very lightly with chili powder.NOTE: Depending on the size of your skillet or baking dish, you may have some ingredients left over. Just build so that the ingredients roughly reach the top of the skillet; they'll shrink quite a bit once the cheese melts!Place into the oven and start watching it about 4 to 5 minutes in. You want to bake it until the cheese is totally melted, hot, and slightly bubbling...but before the cheese starts to firm up/harden. (In other words, you still want the cheese to be extra gooey.)Remove from the oven, top with the diced tomatoes, sprinkle on the tomatoes, and serve immediately with tortilla chips!NOTE: Be sure to have everything ready so you can serve the queso fundido pretty much right out of the oven. It's best when piping hot! IMPORTANT: Wrap a cloth around the skillet handle so guests won't burn themselves.
