1 stick (8 tablespoons) unsalted butter, melted, plus for greasing the pan
2 cups quick oats 
3/4 cup granulated sugar 
3/4 cup whole milk 
1 vanilla bean, scraped (see Cook's Note)
1 teaspoon ground cinnamon 
1/4 teaspoon ground nutmeg 
1 teaspoon salt 
1 teaspoon baking powder 
1 egg 
Heavy cream
Brown sugar
Berries

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-12-inch baking pan with butter.
  • Combine the oats and sugar in a medium bowl, then pour in the milk.
  • Add the vanilla seeds, cinnamon, nutmeg, salt and baking powder.
  • Next comes the melted butter and the egg.
  • Then just stir it all together into a big delicious oaty mess of wonder.
  • Plop the mixture into the prepared pan and spread it out.
  • Bake for 30 minutes, until set.
  • Cut into squares while still warm. Serve with cream, brown sugar and berries.

3/4 c. Steel Cut Oats
1/3 c. Raw Pepitas, Or Chopped Raw Nuts
2 tbsp. Flaxseed Meal
1 tsp. Baking Powder
3/4 tsp. Kosher Salt
1 tsp. Ground Ginger
2 c. Unsweetened Almond Coconut Milk
1/3 c. Pure Maple Syrup
2 tbsp. Melted Coconut Oil, Cooled Slightly
1 Egg
1 tsp. Vanilla Extract
1 c. Fresh Or Frozen Blueberries

Steps:

  • Preheat oven to 375ºF. Lightly coat an 8- by 8-inch baking pan with cooking spray.In a large bowl, stir oats, pepitas, flaxseed meal, baking powder, salt and ginger.In a medium bowl, whisk almond-coconut milk, maple syrup, coconut oil, egg and vanilla extract. Stir almond-coconut milk mixture into the oat mixture. Stir to combine. Add blueberries and stir again.Transfer mixture to prepared baking pan. Bake until oatmeal is set and golden brown, 55 to 60 minutes.Let the mixture cool for 10 minutes. Cut into 9 squares. Serve with additional maple syrup, if desired.

Press the pumpkin occasionally with a spoon as it drains.Grease an 11x7-inch pan. Preheat oven to 350ºF. Stir oats, sugar, baking powder, salt, and spices. Squeeze cheesecloth to remove excess pumpkin water and place 3/4 cup strained pumpkin in another bowl. Add milk, eggs, butter, and vanilla to the pumpkin and whisk until smooth. Stir both mixtures together until combined. Pour into prepared pan. Bake for 35 minutes or until oatmeal is firm and resembles a snack cake. Cut into pieces and serve warm with a dollop of Greek yogurt and sprinkle of cinnamon-sugar.Leftovers may be covered and rewarmed in the microwave. For one piece, 40 seconds at 80% power is sufficient. Try it cold or room temperature on day two as well!
