1 can (8 ounces) unsweetened crushed pineapple
1/4 cup shredded carrot
2 tablespoons grated onion
1 tablespoon plus 1/2 teaspoon reduced-sodium soy sauce, divided
1/4 teaspoon garlic powder
1 pound ground chicken
8 whole wheat dinner rolls, split
1/4 cup reduced-fat sour cream
2 tablespoons mayonnaise
1/4 teaspoon ground ginger
1 cup shredded lettuce

Steps:

  • Drain pineapple, reserving 2 teaspoons juice. In a large bowl, combine carrot, onion, 1 tablespoon soy sauce, garlic powder and drained pineapple. Add chicken; mix lightly but thoroughly. Shape into eight 1/2-in.-thick patties., Place rolls on a greased 15x10x1-in. baking pan, cut side up. Broil 4 in. from heat until toasted, 30-60 seconds. Remove from pan; keep warm., Add burgers to same pan. Broil 4 in. from heat until a thermometer reads 165°, 4-6 minutes on each side., Meanwhile, in a small bowl, mix sour cream, mayonnaise, ginger, remaining soy sauce and reserved pineapple juice. Serve burgers on rolls with lettuce and sauce.

Hawaii’s traditional Kalua pork requires a beach pit, a whole hog, and a day’s worth of smoking. Our weeknight version delivers all the flavor with a fraction of the effort—no shovel required. Pineapple pulls double duty in this recipe—caramelized rings add smoky sweetness, while the just-tangy-enough pineapple juice makes the slaw a tasty stand-alone side dish. Save time by picking up a peeled and cored pineapple in the produce section—the flavor is far superior to canned rings.

1/4 cup unsalted ketchup
2 teaspoons brown sugar
3 tablespoons pineapple juice, divided
2 tablespoons apple cider vinegar, divided
8 ounces ground pork
1/2 cup sliced scallions, divided
1/2 teaspoon kosher salt, divided
1/2 teaspoon black pepper, divided
Cooking spray
8 (1/4-inch-thick) pineapple slices
1 cup shredded red cabbage
8 (1-oz.) whole-wheat rolls, split

Steps:

  • Stir together ketchup, brown sugar, 1 tablespoon pineapple juice, and 1 tablespoon vinegar in a small bowl. Set aside. Combine pork, 1/4 cup scallions, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl; form into 8 patties. Spray a large cast-iron skillet with cooking spray, and heat over high. Add patties, and cook until slightly charred, 2 to 3 minutes. Flip and cook until pork is cooked through, about 1 minute. Transfer to a plate. Add pineapple slices to skillet, and cook on 1 side until lightly charred, 1 to 2 minutes. Top patties with pineapple slices. Combine cabbage, remaining 2 tablespoons pineapple juice, remaining 1 tablespoon vinegar, remaining 1/4 cup scallions, remaining 1/4 teaspoon salt, and remaining 1/4 teaspoon pepper in a bowl. To assemble sliders, brush bottoms of rolls with ketchup mixture; add a pork patty with a pineapple slice to the bottom of each bun. Top with cabbage mixture and tops of rolls.

  • In a medium sauce pan over medium heat, heat oil. Add garlic and cook until fragrant, 1 minute. Add barbecue sauce, pineapple juice, Worcestershire sauce and chili powder. Whisk to combine and cook until thickened slightly, 5 minutes. Add chicken to sauce pan and toss to coat. Make cilantro-lime mayo: in a medium bowl, whisk together Duke’s Mayonnaise, lime juice, cilantro, and garlic. Season with salt. Preheat oven to 350° and place bottom half of slider buns on a large baking sheet.    Build sliders: spread mayo mixture in an even layer on bottom buns. Top with an even layer of sauced chicken, pineapple pieces, cheese, and red onion. Top with top buns, brush with melted butter and garnish with reserved cilantro. Bake until buns are golden and cheese is melty, 10 to 15 minutes.
