3/4 cup granulated sugar
3/4 cup packed brown sugar
1 cup butter or margarine, softened
1 teaspoon vanilla
1 large egg
2 1/4 cups all-purpose flour*
1 teaspoon baking soda
1/2 teaspoon salt
1 cup coarsely chopped nuts
1 bag (12 oz) semisweet chocolate chips (2 cups)

Steps:

  • Heat oven to 375°F.
  • In large bowl, beat sugars, butter, vanilla and egg with electric mixer on medium speed, or mix with spoon. Stir in flour, baking soda and salt (dough will be stiff). Stir in nuts and chocolate chips.
  • On ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.
  • Bake 8 to 10 minutes or until light brown (centers will be soft). Cool 1 to 2 minutes; remove from cookie sheet to wire rack.

3 tablespoons butter
4 medium Golden Delicious apples, cored, cut into 3/4-inch wedges (about 2 lb)
1/4 cup granulated sugar
2 tablespoons packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup apple cider
1 tablespoon cornstarch

Steps:

  • In 12-inch nonstick skillet, melt butter over medium heat. Add apples, sugars and spices; stir to coat. Cover; cook 11 to 14 minutes, stirring occasionally, until tender. Transfer to serving dish; cover to keep warm.
  • In small cup, beat cider and cornstarch with whisk; add to same skillet over medium heat, stirring constantly to blend. Simmer 30 to 60 seconds or until thickened. Pour mixture over apples, and serve.
