Total Time 40 minutes

Prep Time 15 minutes

Cook Time 0S

Yield 4 servings

Number Of Ingredients 12

4

assorted apples (Granny Smith, Honeycrisp, Gala), cored, peeled, and thinly sliced

1/4 c.

packed brown sugar

Juice of 1/2 lemon

1 tsp.

ground cinnamon

Pinch of kosher salt

All-purpose flour, for surface

1

premade pie crust

4 tbsp.

melted butter

2 tbsp.

cinnamon sugar

Ice cream

Melted caramel

Toasted chopped pecans

Steps:

  • Heat grill over medium heat. Make apples: In a large bowl, toss together apples, brown sugar, lemon juice, cinnamon, and a pinch of salt.  Prepare crust: On a lightly floured surface, roll out crust and brush with melted butter. Sprinkle cinnamon sugar all over. Cut dough in half widthwise, then cut into 32 one-inch strips.  Make individual lattice crusts by laying 4 strips of crust side by side. Lift one end of the first and third pieces of crust and lay a fifth piece on top. Lay the first and third back down and lift the second and fourth pieces. Lay a sixth piece on top and repeat with 2 more pieces of crust. Repeat to make 3 more lattice tops with remaining crust.  Cut 4 large pieces of foil about 10" long and divide apples between foil pieces. Place a lattice on top of each then roll top and bottom edges of foil to seal. Place on grill and cook until apples are fork-tender and crust is cooked, 15 minutes.  To serve: Top with a scoop of ice cream, caramel, and toasted pecans before serving.

PROPAH EASTEND PIE, MASH AND LICQOUR RECIPE - FOOD.COM
I'm an Essex girl by birth and an Eastender by heritage, so pie mash and licquor was a childhood treat. You can imagine my horror upon moving to Kent to find that no one outside of London has even heard of the dish, let alone tasted it. So I languished for years without. Sure, I could just get a meat pie and somemash, but normal meat pies are not the same, and the licqour is just impossible. Fortunately, through much experimenting my Mum and I now have a suitable substitute that tastes as good (or bad!) as the real thing!

  • Once pies are brown on top, upturn them on a plate and serve upside-down, with a side of mash and mushy peas. Pour over with the licqour and chilli vinegar. The vinegar is essential for the licqour to taste right, but should be added separately. Lush!

  • For the crust: Gradually work the butter and shortening into the flour in a large bowl using a pastry cutter until it resembles coarse meal, 3 to 4 minutes. Beat 1 egg with a fork in a small bowl and add it to the flour mixture. Add the water, sugar, white vinegar and salt. Stir gently to combine. Divide the dough in half and form each half into a ball. Place each in a large resealable plastic bag and flatten to about 1/2 inch thick using a rolling pin. Place the bags of dough in the freezer until you need them. For the filling: Combine the cherries and sugar in a medium saucepan over medium heat and cook until the juices are hot and bubbly, about 5 minutes. Stir in the balsamic vinegar and cook for 1 minute. Combine the cornstarch and lemon juice in a small bowl and add it to the cherry mixture. Continue to cook until glossy and thickened, 2 to 3 minutes. Remove from the heat and let cool completely, about 30 minutes. Cover and refrigerate until ready to use. Remove the dough from the freezer and let thaw until slightly softened. Put a rack in the lowest position of the oven and preheat to 375 °. On a floured surface, roll out one round of dough into an 11-inch round, starting at the center and working your way out. Sprinkle some flour over the top of the dough if it’s a bit too moist. If the dough is sticking to the countertop, use a metal spatula to carefully scrape it up and flip it over. Lift the dough into a 9-inch pie pan and gently press it against the edges of the pan. Fill with the cooled cherry filling. Roll out the other round of dough to the same size and place it over the pie. Trim the excess dough around the edges and crimp the top and bottom crusts together to seal them. Cut a few vent holes in the top crust. Beat the remaining egg in a small bowl for the egg wash. Brush on the top crust and sprinkle with sugar. Put the pie on a foil-lined baking sheet. Bake until the filling is bubbly and the crust is browned, about 1 hour 10 minutes. If the crust is browning too quickly, cover with foil and continue baking. Let cool about 2 hours before slicing. Serve with ice cream.

CLASSIC SINGLE PIE CRUST | KING ARTHUR BAKING
You may be comparing this recipe with our Classic Double Pie Crust, and wondering why it's not exactly half the size of that recipe. Think about it; can you guess?
