I always make this dish for holidays. If it was up to my kids they'd have this dish every week and once any guest tastes this they always want the recipe. Pickled turkeys are widely available in butcher shops in the Northeast U.S. The cooking of the turkey can be made the day before and the sauce made just before serving.

Number Of Ingredients 7

3 1/2-4 lbs corned turkey (pickled turkey roast)
1 cup ketchup
1/2-3/4 cup brown sugar
1/2 cup water
1/4 cup lemon juice
2 tablespoons honey
2 tablespoons Dijon mustard

Steps:

  • Leaving the strings on, place the pickled turkey roast in clean water and bring to a boil. Lower the flame to low and cook for one hour.
  • Pour off all the water and rinse the roast well.
  • Refill the pot with clean water and cook again, this time for several hours until the roast is very tender (the roast should be nearly falling apart when you poke at it with a fork).
  • Pour off all the water and rinse again.
  • Now combine remaining ingredients in a pot and slowly heat up. When sauch is smooth add turkey roast, coating well on all sides.
  • Serve hot and enjoy!

If you enjoy things like this, then these are for YOU!!! The ones you get at the store or tavern are absolutely horrid! These are by far the BEST I've ever had!!! I had to go through a lot to get this recipe, but it was worth it! The directions may be a bit sketchy, but if you know how to do stuff like this, then it's a walk-in-the-park!

10 lbs turkey gizzards
1 quart white vinegar
2 cups sugar
2 tablespoons dry mustard
8 tablespoons pickling spices
2 large yellow onions, sliced (NOT sweet)
2 lemons, sliced

Steps:

  • Bake gizzards at 275° for 3-4 hours or until tender -- let cool.
  • Remove all fat from the gizzards & cut into bite-size pieces.
  • For the BRINE:.
  • Combine the vinegar, sugar, pickling spice, dry mustard & the gizzards in a stainless steel pan.
  • Bring to a boil & let simmer for 10 minutes.
  • Place the gizzards in a 1 gallon jar in layers with the sliced onion & lemon.
  • Pour the brine over & let set for about 5-7 days.
  • ENJOY!

  • Place turkey in a large pot and pour over pickle juice and 6 cups water. Add salt and sugar and season generously with pepper. Cover with plastic wrap and refrigerate 8 to 12 hours. Preheat oven to 350° with rack positioned in lower third. Remove turkey from brine and rinse under cold water; pat dry with paper towels. Generously season turkey cavity with salt and pepper and stuff with lemons, garlic, onion, and dill. In a small bowl, whisk together melted butter and Old Bay. Brush all over outside of turkey and season with salt and pepper. Tie legs together with kitchen twine and tuck wing tips under body. Place turkey breast-side up on a roasting rack set inside a large roasting pan. Bake turkey, basting every 45 minutes with pan juices, until the meat at the thigh registers 165°, 3 to 4 hours. Let rest 20 minutes before slicing. Serve over pickle chips.

  • Garlic Schmaltz: 1. Preheat oven to 375°F.  2. Slice ¼ inch off the top of a head of garlic, exposing the tops of the cloves inside. Drizzle cut garlic with 1 tablespoon evoo, and wrap in foil. Save some for basting during cooking. 6. Roast turkey and neck at 375°F, basting occasionally with garlic schmaltz, for 3½ hours, or when a thermometer inserted into the thigh registers 170°F. Start checking the temperature at 3 hours. Remove from oven, and tent turkey loosely with foil. Rest for 20 minutes.  7. Remove string, herbs, and vegetables from the cavity and discard. Pour pan drippings into a saucepan and skim fat from the surface. Reduce pan drippings until they coat the back of a spoon for a natural pan jus.
