1 (16.5 ounce) package refrigerated sliceable sugar cookies, sliced
1 (8 ounce) package PHILADELPHIA Cream Cheese, softened
¼ cup sugar
½ teaspoon vanilla
4 cups assorted cut-up fruit (kiwi, strawberries, blueberries, drained canned mandarin oranges)
¼ cup apricot preserves, pressed through sieve to remove lumps
1 tablespoon water

Steps:

  • Heat oven to 375 degrees F.
  • Line 12-inch pizza pan with foil; spray with cooking spray. Arrange cookie dough slices in single layer in prepared pan; press together to form crust. Bake 14 min.; cool completely. Invert onto plate; carefully remove foil. Turn crust over.
  • Beat cream cheese, sugar and vanilla with mixer until well blended. Spread over crust.
  • Top with fruit. Mix preserves and water; brush over fruit. Refrigerate 2 hours.

I know, I know......Velveeta on a pizza? There's a little local pizzeria here and the crusty old guy that owns the place says that this is they way they had pizza when he was growing up in Philly.

1 unbaked prepared pizza crust (I make mine in the bread machine)
2 cups shredded mozzarella cheese
1 1/2 cups prepared pizza sauce
1/2-1 lb Velveeta cheese, cheese thinly sliced

Steps:

  • Prepare pizza crust in the pan or stone that you are using.
  • Arrange slices of Velveeta to cover crust within 1/2 inch of edges.
  • Drizzle sauce evenly over Velveeta.
  • Sprinkle with shredded mozzarella.
  • Bake at 450°F for approx 20 minutes or until crust is golden and cheese is bubbly.
  • Let sit for approx 10 minutes before slicing.

Tomato Pie is a thick crust pizza dough topped with copious amounts of very thick tomato sauce. No cheese is put on the pie before baking. Some folks sprinkle grated Pecorino on the finished pie. It is usually served at room temperature. If the garlic taste in the sauce is too strong for you, the garlic can be sautéed in a small amount of olive oil before mixing into the tomato puree mixture. It is best to make the sauce a day in advance and refrigerate it. If you don’t have a bread machine, mix the dough in a mixer with a dough hook for about 10 minutes after the dough comes together. You can also mix it by hand which will give you a bit of an upper-body workout.
