1 pound ground fresh pork
2 whole eggs, beaten
1/2 cup evaporated milk (or regular whole milk)
1 cup finely crushed saltine crackers
1/4 teaspoon pepper
1 cup packed brown sugar
1 teaspoon prepared yellow mustard
1/3 cup white vinegar
1/4 cup water
1 can (8 ounces) crushed pineapple in its own juice, undrained

For the Ham Loaf
1 1/2 lbs. ground cured ham
2/3 lb. fresh pork
1 cup dry bread crumbs
1/4 tsp. pepper
2 eggs, beaten
1 cup milk
For the Glaze:
1/4 cup vinegar
1/3 cup brown sugar
1 1/4 tsp. dry mustard

Steps:

  • "Ham Loaf: Combine meats, crumbs, pepper, eggs, and milk and mix thoroughly. Form into loaf, making a trough through top of loaf. Pour glaze into trough on ham loaf. Bake at 350° for 1 to 1 1/2 hours. Baste occasionally with glaze. Glaze: Combine all ingredients and mix well."
