2 cups water
1 cup quinoa, rinsed
1 small onion, chopped
1 tablespoon olive oil
1-1/2 cups frozen peas
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons chopped walnuts

Steps:

  • In a large saucepan, bring water to a boil. Add quinoa. Reduce heat; cover and simmer until water is absorbed, 12-15 minutes. Remove from the heat; fluff with a fork. , Meanwhile, in a large cast-iron or other heavy skillet, saute onion in oil until tender, 2-3 minutes. Add peas; cook and stir until heated through. Stir in the cooked quinoa, salt and pepper. Sprinkle with walnuts.

2 lbs peeled and cubed potatoes
1 stick butter
1 sliced onion
2 minced garlic cloves
1 cup milk
to taste salt
to taste pepper
1 cup shredded mozzarella cheese
1 cup cooked and drained fresh baby peas
parsley for garnishing

Steps:

  • Preheat your oven to 375 degrees Fahrenheit.
  • In a large saucepan, soak the potatoes in salted water and bring it to a boil.
  • After some time, reduce the heat to a simmer and cook the potatoes for 15 to 20 minutes until they become tender. Afterward, drain the potatoes and set aside.
  • In a separate saucepan, melt the butter and sauté the onions and garlic until they soften.
  • Add the potatoes and mash then gradually pour in the milk until the mixture turns creamy.
  • Mix in the mozzarella cheese, salt, and pepper.
  • Lastly, stir in the peas and transfer the mixture to a greased casserole dish. Bake it in the oven for 15 minutes until the top portion turns golden. Afterward, serve and enjoy!
