Crockpot Candy + Video - The Slow Roasted Italian image

Crockpot candy is easy to make with just five ingredients! Make this recipe for peanut clusters for a holiday treat or to give as gifts.

Cook Time 2 hours

Number Of Ingredients 5

5 ounces honey roasted dry roasted peanuts (I used planters)
32 ounces almond bark (vanilla flavored)
12 ounces semisweet chocolate chips
4 ounces German chocolate bar (by Baker's)
optional garnish: sprinkles or crushed candy canes

Steps:

  • Layer ingredients into crockpot (I used a 5 quart), cover.
  • Cook for 1 hour on low temperature. Do not stir.
  • After 1-hour stir mixture and continue to cook, stirring every 15-20 minutes for another hour (a total of 2 hours).
  • Meanwhile, line countertop or table with a long piece of parchment paper.
  • Turn off crockpot. Use a 1 tablespoon scooper to scoop out candy from crockpot and onto parchment paper. Make sure candy is not touching. Top with favorite garnish.
  • Allow to cool completely.

At Loaves and Fishes we have huge glass jars filled with a variety of very large cookies. Since we opened our doors, we have had to refill the peanut cookie jar over and over each day. This recipe is for our loyal customers and our guests at the Inn, who enjoy a good cookie.

Yield Yields about 30 cookies

Number Of Ingredients 9

8 tablespoons softened butter
1/2 cup granulated sugar
1/2 cup light brown sugar
1/2 teaspoon vanilla extract
1 egg
1 cup flour
1 teaspoon baking powder
1 cup shelled salted peanuts
2 ounces semi-sweet chocolate, melted and cooled (optional)

Steps:

  • Preheat the oven to 350°F. Butter a baking sheet.
  • In a bowl, cream the butter and sugars with an electric mixer until the mixture is light. Add the vanilla extract and egg. Beat well. Add the flour, baking powder, and peanuts. Blend well.
  • Drop rounded tablespoons of batter, 2 inches apart, onto the baking sheet. Bake for about 10 minutes, or until the cookies are light brown. Cool. Drizzle the melted chocolate over the cooled cookies. Store in a cool, dry place.
