1 1/4 cups Bisquick™ Gluten Free mix
1 1/2 cups warm water
1/2 cup creamy gluten-free peanut butter
1/4 cup granulated sugar
1/8 teaspoon salt
1 egg
1/2 cup chopped banana (about 1 small)
1 sliced banana, if desired
1/4 cup powdered sugar, if desired

Steps:

  • Heat griddle or skillet over medium heat (375°F). Brush with vegetable oil if necessary or spray with cooking spray without flour before heating. In medium bowl, stir Bisquick mix, warm water, peanut butter, granulated sugar, salt and egg with whisk. Fold in chopped banana.
  • For each pancake, pour 1/4 cup batter onto hot griddle. Cook 2 to 3 minutes or until bubbles form on top and edges are dry. Turn; cook other side until golden brown. Top pancakes with sliced banana; sprinkle with powdered sugar.

0.125 tsp Table salt
0.125 tsp Ground cinnamon
1 small Banana(s) ripe, mashed well
2 scoop(s) PB2 Performance Peanut protein with Dutch cocoa plant powder
2 Tbsp Plain unsweetened almond milk or plain lowfat milk
1 large egg(s) Egg(s)
5 spray(s) Cooking spray
0.25 cup(s) Fresh blueberries optional

Steps:

  • Stir together flour, baking powder, salt, and cinnamon in a small bowl. Whisk together banana, PB2 Performance Peanut Protein with Dutch Cocoa Plant Powder, milk, and egg in another bowl. Add dry ingredients to wet ingredients; stir until just combined.
  • Coat a nonstick skillet or griddle with cooking spray; heat over medium-low heat. Spoon 3 tbsp batter onto skillet or griddle to make each pancake (you can use a scant 1/4-cup measure to do this). Cook pancakes for 2 to 3 minutes on one side until you see lots of bubbles; flip and cook until cooked through, 1 to 2 minutes more. Repeat with remaining ingredients.
  • Serving size: 3 pancakes
